    I am a Covid Nurse..and learned to make and can bone broth from you guys. I nvr made the jump to pressure canning until months back doing this. ( forgive me..still only pressure canned this due to my schedule) I made it for my patient's. And I swear it's what made the difference. I lost very few and I swear it was bone broth, soups, and nutrition that made the difference.

    Just a thought for a video. What if you did a video “you know you are thrifty/homesteader/ etc when: like save your bacon grease, etc. I would love to hear all the little things people do daily to be economical.

      That would be a great idea. I save my bacon grease but don't know how long its good for. What can I do with it besides fry an egg or fry potatoes?

      @@cathypayton4804 I added a two inch piece of ginger and a slightly smaller piece of turmeric. Since this post, I started fermenting the ginger and garlic into a paste and then added it just before serving to preserve nutrients. Delicious!

    I just finished mine today, we had bought a half of beef and had 2 pans of soup bones!!!!!! I made dog food out of the beef that came off the bone!! I had bought some roasts on sale and canned them up too!!

    You are so lucky! We have no butcher in our area and marrow bones at the grocery store is over 3.50 per pound. Just for the bones.

    Oh yeah!! Next week is another full week of canning for me. Bone broth of all kinds is on the menu! I have the USDA printed version already to go. Last week canning sessions, I started using my instant pot. What a time saver! I had ugly chicken in the pressure canner on one burner, started heating my water bath canner on the other and used the instant pot to heat up my strawberry jam and again grape jelly. It was awesome! I can't wait use it for my broth. My local grocery store doesn't have any bones so I am on the hunt for a meat processing store.

    That bone broth looks delicious! I can just imagine jars of your broth and jellies shimmering in the sunlight on your windowsill (which is not good for canned foods, I realize). I never thought of buying bones, but will put them on my list!

    Wish I could have smelled your broth as it was cooking...I bet it was heavenly. That is one thing I haven't made because beef bones are too expensive to purchase here. So glad you got a nice batch of bones with your beef order. Thank you for showing us your process.

    Thank you for sharing! I canned chicken broth yesterday and made 2 batches in the instant pot bc I have a big family and can quarts. It makes a difference to make homemade broth and keeping immune compromised family members well.

    I have an 8 quart and I do the soup, on Low Pressure for 3 1/2 hours and it comes out so gelatinous! You can actually use a spoon to scoop it out. I use the instant pot when I drink it.

    Have you tried using an IP strainer/steamer when making broth? It’s so much better than digging around looking for all the pieces, and there’s no splashing when I pour all contents into a strainer (I’m messy). Also, if you use four layers of a flour sack type towel, it collects all the fat. Bonus!
    It’s such a shame the collagen breaks down once pressure canned. I try to remember to have a bit of broth jello before canning.

    Might want to consider adding a tablespoon or two to the pressure canning water to keep the lime scale down from the water. It makes cleaning the jars much easier. We're in Minnesota and have the same issue with our hard water here.

      I have read onion skins also “MAY” add to the positive health aspects. Have you ever tried this? Can’t wait to try this. About how many pounds of bones did you use? Is one kind better flavored than another?

      @@vmhgreenwood I currently use bones I get from a farm, but use bones from the 'garbage' meat. Yep, my bones fit that bill. Marrow bones, beef shanks, oxtails. That broth will rock your world. And afa more nutrients in the skin? Hey, it's another reason to toss them in

    4 hours for broth is fast. I've been making mine in the oven using my big turkey roaster. It takes 2 days at 250°. Will be trying this method, for sure!

    I made my first ever batch of bone broth. I did stove top and it turned out beautifully. Canning it today! Question: Can I use the skimmed off fat for cooking? If so, in what ways? Do I just use it in place of oils? I can see using it for making a roux but are there other things? Thank you for your wonderful video! 💜 My 11 year old son had to have part of his intestines, part of small and part of large right where they meet, removed 10 years ago, so I constantly worry about his gut health even though the doctors say I don't need to. This will comfort this momma when I give it to him!

    Try this.... when you skim that hardened fat off, use a flat metal spatula! It slides right between the broth and the fat! I don't use a solid one, use the kind that that is slotted.

    With mine you can go backwards and then count down to the time you want. I think mine has a 5 hour max pressure cook.

    My last batch I forgot to roast the bones and there wasn't much meat on at all so it was lighter flavor. Next time I'm roasting and putting in a roast too. I got 6 qts and had to spoon off about 3 qts of fat!

    Lisa I had a question I'm hoping you can help. While canning beef broth I started canner. While waiting for the steam to come out so I could start my timer for 10 minutes I noticed leaking around the seal. When the little thing that pops up that starts all the steam coming out so you can start your 10 minutes I still had leaking around my seal. That little thing popped up I started my 10 minutes but still notice leaking around so I turned it off. Waited for the temperature to come and opened it up to check my rubber seal. When I opened the top a few jars sounded like they sealed.. pop.pop. I added a little vegetable oil to my seal and put the cover back on to restart the canning process. I was thinking that the pressure inside the canner would make them pressurizing And seal properly is that correct? I did go through the canning properly and now they are out of the Canner. So I guess my question is if something seals before you put it in the will it still properly in the canning process? I hope I made sense.

      Roasting bones starts the softing of the bones for one, two it browns any meat on them and renders some of the fat as well as heats up the marrow. You get a deeper flavor and color of your broth as well. So it's wise to roast any type of bones for broth making.

    Could I pressure cook the bones the in the pressure canner? It works as both, right? If I pressure cooked them in the Presto, strained it into my largest stock pot (6 qt) then let the stock pot cool so I could skim it and eventually heat it up to liquify it, that'd give me enough time to clean the Presto between cooking the bones and using it to can the broth.

      I use my pressure canner to make bone broths quite often. My next session will be chicken bone broth done in it, have lots and lots of bags of chicken bones in the freezer that needs using up.

    Hey Leisa I heard you say that quarts only needed 25 minutes but when I canned my leftover turkey (in the broth) I also had quarts of just the broth. I gave them all 90 minutes (because of the turkey). Is the broth OK?

    Do you think you could roast them directly in the roaster, if you were to use a roaster to make a bigger batch of broth?

      I just used my Nesco to make a huge batch. Worked great! In the canner now.

    If I can get bones from my butcher, I definitely will make some, in a stock pot.

    Leise, would you use non-organic beef bones to make the bone broth? I've been concerned about making and consuming bone broth due to the shortage of organic beef in my area.
