    Made these three weeks ago and they were great, BUT, it's my nature to tweak so I did.
    First, looking for a crunchier bite, I lined my baking pan with foil and placed a baking rack in it. Then, feeling it a healthier choice to butter, I chose to use Badalucco extra virgin olive oil. After cutting, drying, and scoring three zucchini, I placed each piece cut-side down on the baking rack and brushed the skin with the olive oil. Then, using tongs, I flipped each piece over and followed the recipe directions but with olive oil. The result was wonderful crispy zucchini boats with amazing flavors! Baking time was longer, but it was well worth it. Thank you for your recipe!!

      My grandmother cooked with pure lard and put butter in everything she cooked. The sad part is that she only lived to be 98. 😅 if only she had always cooked healthier.

    You did an excellent job and the simplicity and you didn’t stand there and do everything that needed to be done by showing and taking the time you actually did it absolutely perfectly and they look delicious so I’m gonna try them tonight. You did a good job.

    Tried your recipe, the only thing I did different was I used fresh garlic that was sautéd in butter, also grated fresh parmesan, put the cheese on to bake, then added more fresh grated cheese after it came out of the oven. It was very good, thanks for taking the time to make the video.

      I would tend to grate garlic to about the same quantity as suggested -- I don't know what garlic granules are. I could go either way on the Parmesan -- depends what I have in, but fresh would also have more flavour. Don't see why it would not be tasty with old cheddar, either.

      It's not healthy with the butter. You need extra virgin olive oil. Very American and weird.

    My grandma used to make these for me when I was a kid, though she added breadcrumbs (which I liked). Before she died she made sure my sisters would inherit all the family recipes that have been passed down matrilineally since time immemorial in italy; zucchini boats were one of them so now my sisters make them. I would like to try making them with white zucchini, which I prefer. I will also echo the post below that urged using fresh ingredients if possible--freshly grated or shredded parmesan especially is just leagues beyond the cheaper options.

      I also remember eating this recipe as a kid. I really liked it but I do not remember how it was made then. That is so special that you have your grandmothers recipes. I imagine you have good memories when you make those recipes. I agree that fresh ingredients will taste much better. I hope you try it that way.

    When you say granulated garlic, is it garlic powder or garlic salt?

      Neither. There is granulated garlic. It is bigger pieces of dried garlic than powdered garlic. You should be able to find it at the grocery store. If you use garlic powder use half the amount.

      Like bland, do you? Zucchinis have practically no intrinsic favour, and neither does mozzarella. Why on earth would anyone prefer this to cheese with flavour?

      Yes 400 degrees and if it doesn’t start browning near the end of the cooking time you can increase the temperature to 425. If they brown you do not need to increase the temperature. I hope you like this recipe!

    Why do Americans use butter here? Very weird. Add extra virgin olive oil instead, which is healthier and fits with the vegetable.

    My 3 zucchini from my garden are in the oven right now. 🫠
    My zucchini took longer to cook. About 35 minutes in the oven at 400 temp

    try infusing the butter with some pressed garlic while you prepare everything else. nothing like fresh garlic!

    What about salt? It’s in the recipe in the description, but not on video or instructions part. I understand that Parmesan cheese is salty, but is it enough?

      Add salt to your taste. People have different preferences so it is up to the cook. I don't add salt because I think it is salty enough. I think the first time you cook it leave it off and see what you think. You can always add a bit of salt after it is cooked, then add salt the next time you cook it. Let me know how your Parmesan Bake Zucchini Boats turn out and if you think they need salt.

I put some salt (very little) in the beginning to get some liquid out, then followed your directions. It was pretty good and easy to make. I did sprinkle some more salt later, just to what I had on my plate.

    This is a simple and delicious recipe for zucchini. My zucchinis are so large that the skins and the seeds need to be removed before baking.

    This looks great, but I don't understand why one wouldn't use fresh garlic and freshly grated parmesan cheese. Americans' obsession with dried, processed foods laden with preservatives is unnecessary and illogical, when fresh options are available. It tastes better and is much healthier!

The other day I made a homemade caper dill tartar sauce for my husband to go with fresh trout. He didn't like it; instead he wanted ketchup and mayo! lol.       The recipe is in the description. 400 degrees F. Turn it up to 425 near the end of cooking to get the top darker. I hope yours turns out perfect!
