These all look delicious! Will probably try the soup first as my mother's stomach has been sensitive lately and I've been looking for a good soup to make her.
I made the zucchini soup and it is delightfully tasty! One tip for you if you're planning to freeze it, stir in the herb after the soup has cooled down. This helps to retain the bright green color and flavor of the herbs (Dill & Parsley are delicate herbs and should not be treated with high heat). When re-heating the soup, don't use high heat as the herbs might turn brownish and loose the delicate flavor, Instead, heat it gently over low-to-medium heat (learned this from my experience). Thank you Lisa for introducing this as it is now one of my favorite soup recipe from Downshiftology!
Zucchini is packed with many important vitamins, minerals, and antioxidants. It has a high fiber content and a low calorie count. Fiber plays an important role in digestion and may limit the likelihood of suffering from a variety of GI issues.👍
We came home from a five day camping trip and found four arm size zucchini in our garden. We made the zucchini tacos with them. They were amazing, I wish we could add a photo to our comments! I would add one simple suggestion, however … if you are going to use ginormous zukes for this recipe… bake them for a while before filling them with the meat mixture. It took almost an hour for them to become tender and I was concerned about the meat drying out. I covered them with a foil tent to try and prevent this and it helped as did spooning on any juices from the pan. Needless to say, we have had multiple meals from this one recipe using our huge zucchini… Thank you so much! 😊 I highly recommend this recipe! ~ Maria

Zucchini are the best :) Thank you Lisa. Great ideas for summer and other seasons. One other idea: I am from Algeria and there we do a zucchini "shakshouka" . First we fry zucchini slices in olive oil (then reserving them and patting them to remove the excess oil) then we cook the fried slices with onions, tomatoes, garlic, spices etc. shakshouka style. We it it cold as a salad :)

I just tried making the muffins. I love it but I replaced the tapioca with arrowroot ,maple with agave syrup. I had to add cassava cauliflower flour since it was a bit more wet . It turn out pretty good 👍🏽

I'd suggest using traditional method of mortar and pestle rather than a food processor to make the pesto. The texture makes it more enjoyable to eat, it looks great and I always leave a few pine nuts whole for added yumminess.

I couldn't find my spiralizer so I used the strip attachment on my mandolin and I think they looked just like noodles! And I cut back my flourishing basil plant so the pesto made the dish so fresh. Thanks so much! I think I'll make the soup next.

I make a very similar soup but with asparagus, lemon zest and juice, and some creme fraiche. It's a versatile way to make a soup from any vegetable!
