Silky pandan basque cheesecake but 50% less calories?

  • Accidentally came up with this when looking for an alternative to using 1kg of Philadelphia cream cheese. I’m slightly lactose intolerant and this is much easier on my stomach.
    Not that I believe in restricting yourself, but it also happens to have half the calories of regular basque cheesecake if you’re looking for something lighter :)

    INGREDIENTS
    6 eggs
    900g strained full fat greek yogurt (I strained 2x 1kg tubs of yogurt)
    250g white sugar
    400g coconut milk (100% fat)
    30g cornstarch
    6-8 pandan leaves
    METHOD
    (2 DAYS BEFORE)
    PANDAN EXTRACT
    1. Cut up pandan leaves in 1-2 inch sections
    2. Blend with 200ml water
    3. Leave in fridge undisturbed for 2 days
    4. Once the mixture has separated, decant the top light green layer
    5. Keep the dark green bottom layer (pandan extract!)
    STRAINED YOGURT
    1. Pour yogurt into a cheesecloth
    2. Bundle the cheesecloth and prop it up on a sieve placed over a large bowl
    3. Leave in fridge for 2 days
    (DAY OF BAKING)
    1. Preheat oven to 200 C/400 F
    2. Line a 8in/22cm springform cake tin with baking paper
    3. Beat the eggs, add strained yogurt gradually and mix until smooth
    4. Add sugar, coconut milk, pandan extract and cornstarch, mix until smooth
    5. Pour batter into cake tin and bake for 60 minutes, or until the cake darkens on top and is still very jiggly in the centre
    6. Let cool completely before peeling away the baking paper.

    Do you leave the cheese out for 2 days when you're sieving it or do you have to put it in the fridge while it's being sieved?

      put it in the fridge- you can basically do it the same day as the pandan extract :)
