My Scottish Grandma's Famous Shortbread Recipe + Why I Flew to Florida for it!

  • Every year for Xmas my grandma made Scottish style shortbread cookies. This is my attempt at replicating them. I hope she likes them, let me know what you think in the comments!

    SCOTTISH SHORTBREAD RECIPE
    320g or 2 -2.5 CUPS AP FLOUR
    110g or 1/2 CUP WHITE RICE FLOUR
    110g or 1/2 CUP SUGAR
    220g or 2 STICKS COLD BUTTER(16 TBSP) (cut into small cubes or grated on box grater)
    3g SALT or 1/2 tsp
    1. Combine flour, rice flour, butter, sugar, and salt in bowl of stand mixer or in medium mixing bowl
    2. Mix on low speed for 3-4 minutes or until butter and flour are pebble like
    3. Mix on medium speed for 10 more minutes or about 15 minutes in total or until dough is formed and is clearing the bowl as shown in video.
    4. Once mixed, move dough over to half sheet pan lined with parchment paper
    5. Press shortbread dough into a rough 9"x7" or 20x17cm rectangle (roughly)
    6. If you'd like perfect rectangles, perforate as shown in video, then score with fork
    7. Bake at 275F or 135C for 45 mins to 75 mins depending on how crunchy you'd like.
    45 mins will be soft and light, 75 mins will be crunchy and golden.
    8. Take out and let cool 10 mins.
    9 Cut along perforations while still hot...serve
    CHOCOLATE CHIP SHORTBREAD VARIATION
    320g or 2-2.5 CUPS AP FLOUR
    110g or 1/2 CUP WHITE RICE FLOUR
    55g or 1/4C. SUGAR
    55g 0r 1/4C. BROWN SUGAR
    3g or 3/4tsp VANILLA EXTRACT
    220g or 2 STICKS (16 TBPS) COLD BUTTER (cut into small cubes or grated on box grater)
    3g or 1/2 tsp SALT
    115g or 4 OZ 70% CACAO CHOCOLATE
    Follow recipe as before, add chopped chocolate after dough is clearing bowl.

      The butter shouldn't be grated. ? That's how you make shortcrust pastry. It makes it more crumbly
      Shortbread biscuits are supposed to be hard firm and crisp. His grandparents seem to have also confirmed this saying they prefer them crisp ??

      Same here. I have a big Hobart mixer (same as the kitchenaide, but its the commercial version). But it is too hard to store and use, to big & clunky. I would 7ee a hand mixer but I've burned out the motor on 2 now, so I am more careful to use them on stuff that is not too stiff. My hands get tired on shortbread but I love it. So I 0ut up with it.

    Hi Brian. Am a baker from India. Thank you for this foolproof recipe. I tried it and it came out awesome. I added some orange rind for an Orange shortbread version and the flavour was awesome. I have seen so many shortbread recipes and also tried some when I visited Scotland, but the fact that you did not add any liquid in the dough and let the stand mixer do its job was infact unique.     The first time I had a Scottish shortbread was when I lived in Ethiopia and I still can vividly remember how it tasted , I had a Scottish teacher and she invited us to her house and that’s when I had it for the first time. To this day I have never tasted something similar so I’m going to try to make this recipe.

    This video was incredibly wholesome. I lost my grandmother last year and watching people I admire (been here since the jumbo muffins video and have watched every video since then 😆) hang out with their grandmas has made me feel better about it. I'm glad you got her recipe and you were able to spend some good quality time with both of your grandparents. Lotsa love 💚

      Yeah same with my Nana from Scotland. She taught me how to make it the kneading way and to knead in all my love for the people I was making it for! My first cooking lesson. We also cook it closer to an hour and then sprinkle sugar on the top while it’s cooling.

    How sweet is this video! I loved it! I am feeling very sad, both my parents passed within five months of each other. I am feeling nostalgic (and sad that they will never make their cookies for me again, amongst everything else) looking at all the cookie recipes they made each year for us kids. I will at least make my Dad's Springerlies that he made every single year. He was born in Germany, I'll keep that tradition going. Thank you Brian for this sweet video.

      Way to complicated,Im Scottish made shortbread for years. Should only take about 32mins from start to finish,mix by hand,press into tray, no need too line with baking paper.

    My Ma's parents had a bakery in Depew, New York when I was growing up... Colonial Bakery on Broadway at Transit. One of my strongest holiday memories was asking my Grandpa if I could go in to the store front and get a Christmas Anise cookie. He always said yes, because he knew how much I loved them.. and I know how much he loved me.
    Watching this made my night. Thank you Brian for helping me remember a Christmas Time from my past. Grandparents and cookies. It lifted me out of a dark place.

    I loved this video. It made me think of making Welsh Cookies every Christmas. It is a family recipe. I made them with my mother on Christmas day. She took a bite of the first one after they cooled and said, "Now it is officially Christmas."

    I read a book when I was in 9th grade (US) and one of the main characters was Scottish. She had "Shortbread Day" and would sit in a chair with her mixture and work it almost all day...feeling the butter work through the dry ingredients with her hands. I remember thinking "bah!     Love this video! It has a few of my favorite things in it: shortbread, grandmas and tall grandsons! reminds me of me and my grandson.     4 cups wheat flour, 1 cup oil, 1 cup icing sugar and 250gms butter. Mix soft butter and icing sugar together until creamy. Gradually add the oil and a the flour . Roll out or a
    Make little balls and press flat with a fork. Bake at 180 until light brown. Cool and enjoy. Delicious shortbread from South Africa.

    Met a lot of people that think they don't like shortbread until they try it homemade.
    It's super easy to make and very forgiving. Nothing like the store bought stuff in my opinion!

    Shortbread, is my most favorite 💓 cookie. Loved this very sweet vid, and honor to your adorable grandma. I could be your grannie. Lol my own Hungarian grandma, taught me to bake at
    7 yr. I'm now 76. And passing the cookies recipes down to my daughter & granddaughter & son. They come, each December to bake dozens of Hungarian kiffle and others, for the family at Christmas 🎄 A wonderful memory & knowledge to pass on.🥰

    We never use a mixer in Ireland. You just have the butter at room temperature and cut it into chunks, rubbing it into the flour until it looks like fine breadcrumbs. Then you stir in the sugar, then add a spoonful of water or milk to bring the dough together. Just press into a lightly greased baking tin and score the portions. Let it cool completely in the tin and dredge with caster (fine) sugar. We do not use rice flour, but sometimes use semolina.

    I adore shortbread cookies. My husband is British, I’m American, and we live in Ireland. We have so much fun eating different versions of foods from Europe.
    Scottish food is so delicious and, as shown by the video, simple in itself.

    I made shortbread once and found that the secret to the flavor like you get from Walkers is the butter you use. Homemade is always better but if you use Kerrygold butter the taste is spot on.

    did they like the chocolate chip shortbread?? so cute :) my mom makes "scotch cakes" cookies from a really old recipe book and they're similar to shortbread but only ingredients are butter, flour, and brown sugar. they're really good!

    I remember the first time i ever ate shortbread in 1975 (10 years old) at my friends house. I've been making it ever since. My brother stands over the shortbread at Christmas and eats one after another. Yours is a simple yet great recipe - i can tell. And your step by step technique is great. Thanks for sharing.

    I will definitely be making this. Fortunately, my kitchenaid mixer has a special paddle(that I bought separately), so it will probably take less time to come to that dough sort of consistency. Great video and great origins. I love that you are putting your grandmother in this. It's so sweet.

    Love these heirloom recipes and the way they honour those that came before us. Friday morning I'll be making our family's traditional Tourtière du Lac St-Jean, and the best part is that there are as many versions of this as there are families in Quebec! Awesome that your grandfolks are here to to tell you, like only they can, that they're "too soft" (awww... 😊) so that your Gram's recipe can live on RIGHT. lol. Love love love this vid!

    Nothing better than Scottish shortbread. I just love it. I got my recipe from my Gran who lived her whole life in Scotland. She’s gone now but every time I make her shortbread I remember all the good times I had with that wonderful woman.

    Loved you going to see your wee granny ;) I'm Scottish and we use 3 ingredients, plain flour, icing sugar and butter, roll into a log in cling film then place in fridge (easier to cut into individual rounds). Nice variations are lavender heads in mix or roll edges of cut rounds in brown sugar b4 baking (Highland shorties) Once very slightly brown remove, cool then sprinkle with caster sugar. So many ways to make this, at Christmas use tree cutters

    In one short video I learned some good techniques, a new way to make shortbread, and got choked up. Damn. So nice to see generations interacting like friends, instead of the awkward "and...how are you?"
    I just learned that genealogists often track family ties, regions, and ethnicities using heirloom recipes. Please, document your family's recipes, Brian. It's such a treasure.

    This made me miss my grandparents. They were both from Glasgow Scotland. They always had store-bought scottish butter cookies and when i see them in the store i think of them 🙂
