It's nice to see someone using only three ingredients when making their shortbread. I'm a 76 year old Scottish woman now living in NZ. My father was a master baker in Scotland when I was at school & he too only used three ingredients, though the quantity & method was slightly different to yours. 8 oz flour, 4 oz butter, 2 oz granulated sugar. put all ingredients into a bowl & rub together until you have a fine breadcrumb texture. Knead mixture until you get a dough. I have the wooden mold he had in the 1940s & still use it. I can get two cakes of shortbread with the quantity of ingredients above. The most difficult part I find is getting the dough out of the mold keeping the fluting intact. I give the wooden mold a very light dusting of corn flour to achieve this. You have to hit the mold on its side until the dough separates & then is placed on a baking tray, two to a tray. I fire the shortbread in the oven for approx 1tray 320'F for 30 -40 mins depending on your oven. The texture is very different to what you buy in the shops. I personally don't like that shortbread, It's too much like a biscuit. When dividing a cake of shortbread, it should never be cut but scored with a knife into wedges & then broken apart. Writing this, I'm realising now how I miss all the wonderful baking he did at home even after he left the bakery. I wish I had more attention & learned more of his recipes. Sorry to have rambled here. just had a wee stroll down memory lane. 😊😀
I’m Scottish, and I can confirm this is the recipe I was taught in the 1970s. It also used to be called 2-4-6 shortbread, 2oz sugar, 4oz butter and 6oz flour.
That's exactly right, In the bakery business we called it the 1,2,3, formula. Back then we used the old pounds and ounces and our recipe was 1lb sugar, 2lb butter and 3lb flour. I'm Nigerian and seeing the recipe and the simplicity of ingredients, I gave the recipe a try. Loved it and people that tasted also gave it a big thumb. It will be a good addition to small chops, that we make for parties, in my country. I added liquid milk flavour to my butter before mixing the ingredients and loved the overall milky smell at the end. Thank you Mr Paul for a simple, straight forward recipe/video.
Hi edima, I used margarine. I have tried it with 3 different brands now, quite good. Advice u dont add salt, cuz the salt in the margarine seems to serve. TRY IT WITH AND WITHOUT PINCH OF SALT AND LETS KNOW. HAPPY BAKING @@edimadennis4055
Hi Elizabeth, thanks commenting, but I even get people from Scotland telling I've got it wrong, it should have cornflour in and it should ground rice in and it would be better with some vanilla in. I would like to bet these people have never baked a shortbread in their lives.
@@MrPaulsPantry They are the ones that are wrong. There are only three ingredients in Shortbread. Flour, butter & sugar. My father was a master baker & he worked with the Buckhaven co-op in Fife Scotland before the war & went back when the war was over. I have put his recipe above. With extra ingredients you don't have true shortbread but merely biscuits manufactured for the masses. I would never buy shortbread out of a shop. I tasted one once that came from a tartan tin "won't say the name" It was an insult to my palate having grown up with the real deal.

Several years ago, I had to give up eating shortbreads (my favorite cookie!) because the best are usually made with dairy product ( I had to switch to plant-based eating for health reasons). So after many years of forfeiting shortbread… I’ve been on the hunt for an authentic dairy-free shortbread recipe and none of them tasted perfect, until I found your video! I ended up substituting the butter for plant-based vegan butter and it tastes PERFECT! Just like the real butter version. Everything else, I kept exactly the same as your recipe. Now I make them as often as possible! And Every time I make them, I can’t help but think about you and hope you are having a nice day. Again, thank you so much for doing this video for us! I've always loved Scottish Shortbread, but decided to make them by myself only now (idk why haha) and oh my god, they turned out incredible. This is the real deal. My mother (who was born in 1917) used exactly this recipe, and she got it from her grandmother (who was Scottish but was born here in Canada somewhere around 1860). This recipe goes back a long way!

I too am scottish in canada 41 years. I found a recipe for sheetpan scottish shortbread with the very same ingredients with addition of rice flour. Recipe makes a medium and small pan and if you cut into 2 bite size you get approximately 100+ pieces. So glad to see the true recipe without cornflour, vanilla essence etc added and it is not a cookie.

Dear viewers and readers, this shortbread recipe makes, beyond a shadow of a doubt, absolutely delicious shortbreads!!! This recipe created enough dough for 2 batches in a 9x9 shortbread pan I had (each batch yielded 9 large 3-inch square shortbreads, a total of 9 large shortbreads per batch and 18 large 3-inch square shortbreads from this recipe). I baked them last night and my family has already gobbled up the first batch! Thank you for sharing, Mr. Paul!!!

I gained 10 pounds one year eating Lorna Doone brand shortbread, one snack size package every day with my cup of coffee for breakfast. When I quit, I lost the extra weight. They were sooo good!❤️. Thanks for this very simple recipe. I'll give it a go. Regards from Texas 🙂
Have tried this recipe twice this past month. It produces exceptional shortbread cookies, in my opinion. Very simple but the result is perfect. Can't recommend this one enough. Thanks, Paul!!
I make use this recipe all the time... I double the quantities. I use salted butter and omit the pinch of salt. Sometimes I'll only use caster sugar or sometimes I'll do half sugar and half caster sugar. I put the dough in cling wrap and form narrow logs. I leave it in the fridge for at least 20 min to harden or until the next evening depending when I plan to bake. I then cut it the log into squares and place them onto a baking tray and bake. They are yummy.
I made these last night and they were absolutely perfect! They took quite a bit longer to bake as I used a 6-inch round pan, hence they were thicker. Thicker but damn delicious and they were the easiest treat I have ever baked! Thank you so much for this video 😊

I've made shortbread for years but this is the best recipe (sorry mum) and I learned a lot. Never knew the fork marks had a purpose! Also, good to understand the reason for making them 1/2 inch thick. I like making them by hand and prefer weighing ingredients rather than measuring them. The only suggestion I can offer is to use good quality butter. Delicious results and great video. Thanks!!!!

Lovely channel; I just subscribed, after watching your Roasted Potato video. Delightful instruction without noisy music & unnecessary "chatter". Years ago, I was newly married and trying my hand at making Scottish shortbread. Since I was planning to give them for Christmas gifts in pretty tins, I decided to double the recipe. I softened the butter, measured the sugar and got interrupted just as I prepared to measure and add the flour. I returned and forgot to double the flour. Needless to say, the "recipe" was swimming in a pool of melted butter, when I realized I hadn't doubled the flour. Not wanting to waste so much butter and sugar, I decided to cool the mix a bit, and add the additional flour, hoping it would bake up. Amazingly, it worked out, though with an interesting caramel flavor 🤭 No one was the wiser for it and I got many compliments for my "unusual" shortbread. This video brought back that memory 😊

Hi Mr Paul, this is the recipe that my Scottish cookery teacher taught me over 55 years ago. There was a slight difference in the way she taught me to mix it. Her method was to mix the flour sugar and pinch of salt together into a pile on the table then take the stick butter in one hand and gradually squeeze the flour little by little into your butter. Very tiring but it didnt take too long. Then once you had a ball of pastry do exactly what you did. It's the best shortbread in the world !! Thank you Mr Paul for reminding me of that lovley lady Mrs Ennis.😊
I'm glad simply using your hands to mix the dough is the way to do it. My hubby likes to do things "professionally", so he used a mixer, pastry flour and added vanilla. They weren't the same as my Scottish grandmother's who made it the way you did. I'm so glad I watched this video.
Before my grandmother passed we would make a bunch of cookies for Christmas, and this was one of the styles. She mixed it up a little bit with dipping the cookies half in melted chocolate and a bit of sea salt flaked on the top. Im happy i found this video to remind me the way to make them. Might have to bring back the tradition this year.

As a variation on a theme I made the millionaires shortbread from your website today. Yummy 😋 I would like to make an adult version with maybe Cointreau or Grand Manier in the caramel. When would you recommend to add the liqueur, at the beginning with the condensed milk (will the alcohol cook out too much) or at the end (will it crystallize the caramel)? @@Alexis84DE You can add alcohol to caramel but there are two things to remember. If you add the alcohol after the caramel has been cooling a while the crystallisation has already taken place so the alcohol won't affect it. However, it does tend to thin the caramel slightly so I cook the caramel a little longer to compensate for this. Hope this helps.
I had never tried biscuits like these until a visit to England. They were so delicious and different from anything we eat in the states. This recipe is simple, quick, delicious, and authentic (not that I’m an authority, but they taste like the ones I had from England). They go great with tea or dare I say, coffee.

@@MrPaulsPantry Oh yeah! I made this all the time as a kid. One of the first things Mom helped me with. In a pie pan. I had 4 hungry Bros and Mom and Dad whenever I baked. My cakes fell over and I made my frosting blue. But there was NEVER any problem of leftovers haha! Thankyou!🏴🇬🇧🍪 I've used icing sugar to make sugar cookies for my daughter. They were actually pretty good. To be honest even the raw dough for these things was tempting when I was pregnant haha.

I'm Nigerian and seeing the recipe and the simplicity of ingredients, I gave the recipe a try. Loved it and people that tasted also gave it a big thumb. It will be a good addition to small chops, that we make for parties, in my country. I added liquid milk flavour to my butter before mixing the ingredients and loved the overall milky smell at the end. Thank you Mr Paul for a simple, straight forward recipe/video.

Hi edima, I used margarine. I have tried it with 3 different brands now, quite good. Advice u dont add salt, cuz the salt in the margarine seems to serve. TRY IT WITH AND WITHOUT PINCH OF SALT AND LETS KNOW. HAPPY BAKING

@@MrPaulsPantry They are the ones that are wrong. There are only three ingredients in Shortbread. Flour, butter & sugar. My father was a master baker & he worked with the Buckhaven co-op in Fife Scotland before the war & went back when the war was over. I have put his recipe above.
With extra ingredients you don't have true shortbread but merely biscuits manufactured for the masses. I would never buy shortbread out of a shop.
I tasted one once that came from a tartan tin "won't say the name" It was an insult to my palate having grown up with the real deal.
My brother and I made these for our family’s Christmas cookie competition last year, and my mom declared us the winners! I’ll be making these for my neighbors this year!

Hi Mr. Paul! First off, I cannot thank you enough for posting this recipe. Several years ago, I had to give up eating shortbreads (my favorite cookie!) because the best are usually made with dairy product ( I had to switch to plant-based eating for health reasons). So after many years of forfeiting shortbread… I’ve been on the hunt for an authentic dairy-free shortbread recipe and none of them tasted perfect, until I found your video! I ended up substituting the butter for plant-based vegan butter and it tastes PERFECT! Just like the real butter version. Everything else, I kept exactly the same as your recipe.
Now I make them as often as possible! And Every time I make them, I can’t help but think about you and hope you are having a nice day.

This is the real deal. My mother (who was born in 1917) used exactly this recipe, and she got it from her grandmother (who was Scottish but was born here in Canada somewhere around 1860). This recipe goes back a long way!
Hi there, YES it is the original recipe, however, I get many people commenting here telling me I've got it wrong, should have cornflour/cornstarch, Semolina Ground Rice, etc. added. Never mind, they're the ones missing out on the real deal!

I too am scottish in canada 41 years. I found a recipe for sheetpan scottish shortbread with the very same ingredients with addition of rice flour. Recipe makes a medium and small pan and if you cut into 2 bite size you get approximately 100+ pieces. So glad to see the true recipe without cornflour, vanilla essence etc added and it is not a cookie.
For the first time in my life, I ventured into Scottish Shortbread making. Followed all the instructions and got: A BRILLIANT SUCCESS. Thank you, Sir.

I make use this recipe all the time... I double the quantities. I use salted butter and omit the pinch of salt. Sometimes I'll only use caster sugar or sometimes I'll do half sugar and half caster sugar. I put the dough in cling wrap and form narrow logs. I leave it in the fridge for at least 20 min to harden or until the next evening depending when I plan to bake. I then cut it the log into squares and place them onto a baking tray and bake. They are yummy.
I made these last night and they were absolutely perfect! They took quite a bit longer to bake as I used a 6-inch round pan, hence they were thicker. Thicker but damn delicious and they were the easiest treat I have ever baked! Thank you so much for this video 😊

I've made shortbread for years but this is the best recipe (sorry mum) and I learned a lot. Never knew the fork marks had a purpose! Also, good to understand the reason for making them 1/2 inch thick. I like making them by hand and prefer weighing ingredients rather than measuring them. The only suggestion I can offer is to use good quality butter. Delicious results and great video. Thanks!!!!

Years ago, I was newly married and trying my hand at making Scottish shortbread. Since I was planning to give them for Christmas gifts in pretty tins, I decided to double the recipe.
I softened the butter, measured the sugar and got interrupted just as I prepared to measure and add the flour. I returned and forgot to double the flour.
Needless to say, the "recipe" was swimming in a pool of melted butter, when I realized I hadn't doubled the flour. Not wanting to waste so much butter and sugar, I decided to cool the mix a bit, and add the additional flour, hoping it would bake up. Amazingly, it worked out, though with an interesting caramel flavor 🤭
No one was the wiser for it and I got many compliments for my "unusual" shortbread. This video brought back that memory 😊

Hi Mr Paul, this is the recipe that my Scottish cookery teacher taught me over 55 years ago. There was a slight difference in the way she taught me to mix it. Her method was to mix the flour sugar and pinch of salt together into a pile on the table then take the stick butter in one hand and gradually squeeze the flour little by little into your butter. Very tiring but it didnt take too long. Then once you had a ball of pastry do exactly what you did. It's the best shortbread in the world !! Thank you Mr Paul for reminding me of that lovley lady Mrs Ennis.😊

I'm glad simply using your hands to mix the dough is the way to do it. My hubby likes to do things "professionally", so he used a mixer, pastry flour and added vanilla. They weren't the same as my Scottish grandmother's who made it the way you did. I'm so glad I watched this video.
In the bakery we always mixed these by hand. The big commercial companies have a special type of mixer, not the normal type.
Before my grandmother passed we would make a bunch of cookies for Christmas, and this was one of the styles. She mixed it up a little bit with dipping the cookies half in melted chocolate and a bit of sea salt flaked on the top. Im happy i found this video to remind me the way to make them. Might have to bring back the tradition this year.

As a variation on a theme I made the millionaires shortbread from your website today. Yummy 😋 I would like to make an adult version with maybe Cointreau or Grand Manier in the caramel. When would you recommend to add the liqueur, at the beginning with the condensed milk (will the alcohol cook out too much) or at the end (will it crystallize the caramel)? Your expert tip would be much appreciated. Thanks and stay safe, greetings from Germany
@@Alexis84DE You can add alcohol to caramel but there are two things to remember. If you add the alcohol after the caramel has been cooling a while the crystallisation has already taken place so the alcohol won't affect it. However, it does tend to thin the caramel slightly so I cook the caramel a little longer to compensate for this. Hope this helps.
I had never tried biscuits like these until a visit to England. They were so delicious and different from anything we eat in the states. This recipe is simple, quick, delicious, and authentic (not that I’m an authority, but they taste like the ones I had from England). They go great with tea or dare I say, coffee.

@@MrPaulsPantry Oh yeah! I made this all the time as a kid. One of the first things Mom helped me with. In a pie pan. I had 4 hungry Bros and Mom and Dad whenever I baked. My cakes fell over and I made my frosting blue. But there was NEVER any problem of leftovers haha! Thankyou!🏴🇬🇧🍪 I've used icing sugar to make sugar cookies for my daughter. They were actually pretty good. To be honest even the raw dough for these things was tempting when I was pregnant haha.

I just watched your video absolutely wonderful my husband‘s grandmother was from Scotland and she would make these and send them to us for Christmas. she made it in the pie shape.
I had my first taste it was so good we ate one and a quarter of the three pies lickety-split‼️
We stopped and said we got to save some of this for everybody else‼️
