In American Chinese food, chow mein was traditionally a mixture of veggies, mainly bean sprouts, and meat stir fried and a light gravy was usually incorporated my using a corn starch slurry after some of the water content was cooked out of it and crunchy noodles put on top. But like I said, some restaurants will list chow mein and actually mean noodles, and they are usually much thinner than the traditional lo mein style and vice versa. Just depends on the restaurant in question I reckon

I don't understand why you boiled the chicken after seasoning it with salt mixed with baking powder. By doing so, the seasoning is diluted and washed away into the boiling water. You are left with bland cooked chicken
Boiling the chicken after marinating? Normally in Chinese technics cooking , the chicken strips are stir fried in a little oil and that way it keeps all that good flavors you've put in !!! Just saying!!!
