    A tip from Texas: Build your own barbeque skewers from stainless steel heli-arc welding filler wire from the welding supply store. They come in 3 ft sections which you bend into a narrow U-shape. Ask for 1/8 inch diameter wire.
    The advantage is that two wires through the meat keeps it from rotating when you turn it over. Without it, the heaviest part of the meat always faces down and the top remains raw.

      This trick also works very well with shish kabob salmon, which is excellent when cooked over high heat on a outdoor gas grill or barbeque pit.

    Love the channel and love whatever it is that you just made, but in my culture (middle eastern - Iraq) Kabobs are different. Even for Persian/Iranian culture (my wife’s culture), Kabobs are a famous delicacy there and I highly recommend visiting a Persian restaurant and ordering koobideh (ground beef / chicken) as well as chicken Kabob (whole pieces of chicken). Hope you see this and take the family out with you to try a piece of our culture! Much love!

    You mentioned poke, it would be awesome if you were to do a poke bowl episode. A spicy tuna and/or tuna poke bowl episode would be fantastic.

    I would LOVE to see Sam do a good ole Iowa breaded pork tenderloin sandwich! You know the type that is as big as your plate but comes with one bun! Two of my favorites are Baxa's Sutliff Store and Tavern and AJ's Bar and Grill in Mt. Sterling Iowa.

    I remember watching you around 2005 I think when I was stationed at Great Lakes, IL at RTC. You made a dish I still make to this day. It was grilled Roman lettuce with bacon, almonds and cheese. My family love it. I love what you cook and have made a lot of your dishes. Thank you and your crew for your amazing videos that crack me up!!!     Those look awesome, and so easy to do! Might just have to do this with the neighbors while we're sitting around the firepit! And where's the garlic press? Did I miss an episode that explains why Sam is using pre-minced garlic?

      They've shortened the episodes lately. I think it's to get a better response from the TH-cam algorithms. I get it, but it's kind of annoying quite frankly. I liked the longer episodes with all the nonsense in between the cooking.

    We were in Istanbul last month… they really know how to cook and bring out the flavour of lamb… their kebabs were spectacular… I think is the spices they use... prefer it over what i had in Athens

    The coolest part is cleanup. Just toss it all. I think a pizza stone or some pavers under the foil pan would be a good idea.

    Great idea! I think if you were to try it at home, maybe double up the pans and then put down a couple of sheets of aluminum foil on the whatever surface you put the grill on.

    When my daughter was small, we raised free range chickens. They would fly up and roost in the trees at night. They could not fly far, but far enough to get high up in the trees.

    Another awesome video! Thanks Sam! I have a Dutch Indonesian descent and my family makes a kabob called Sate Babi made with pork. I went to get pork from the butcher at kroger for a party and they tried to tell me pork loin would make a better kabob. My father and mother for years and years made it with pork shoulder (butt) and it was so tender and flavorful! I told them bro this is a family recipe...just cut the pork butt I asked for! Lol Pork shoulder definitely makes an awesome kabob! Can you tell me where you got your skewers? Are they stainless steel?

    Sam: Sacrifices his Epicurian cutting board. Learns that wood cellulose byproduct cutting boards also burn when, exposed to high heat.
    Lesson learned: Make sure that whatever is underneath the heat of the hot .coals is fire rated, and suitable for extreme temperature.
