- Avial is a dish that has a unique place in typical Kerala as well as Tamil cuisine and Udupi cuisine. It is a thick mixture of vegetables, curd and coconut, seasoned with coconut oil and curry leaves. Avial is considered an essential part of the Sadya, the Keralian vegetarian feast.

Ingredients
2 tbsp coconut Oil
1/2 cup curd
2 springs curry leaves
1/2 cup fresh coconut grated
2 piece green chillies
2 tsp Jeera(cumin seeds)
2 cup Mixed Vegetables like Eggplant, plantain(green banana), potato, Drumstick, Snow pea, beans, carrot, winter melon etc
1 tbsp Rice flour( for thickening)
to taste Salt
1 tsp turmeric powder
1/2 cup Water
Directions:
In a Vessel cook all the vegetables with little water, salt & turmeic powder till its cooked properly. Grind coconut, green chillies & cumin seeds to a fine paste & add this to the mixed vegetables. Take 1 tbsp of rice flour & mix this with little water & make a fine paste without any lumps & add this to the mixture. This will thicken the gravy. Let this mixture come to a boil. The gravy should be thick in consistency. Now add curry leaves, Coconut oil & thick curd to the mixture & mix well. Avial is ready

Chef, it was actually really refreshing to see you use your hands. My parents are Filipino and often stay away from using their hands (this is traditional) even when good family friends are around, in fear that it looks barbaric. I will never understand the stigma.

I have made aviyal many times in my life. I have been told that I make it very well too. But when I followed your instructions it just took my aviyal to another level...., way higher than my usual. Rice,sambar and avial thats the combination...and in kerala we add plain coconut oil in the end...not while boilng the vegtables...nd no tempering with mustard seeds..
But anyway the way you cook is great..we enjoy a lot...

Aviyal, we prepare when we have whole lot of left veges and wonder what to do. Atleast 8-10 veges goes in, definitely green peas, Bitter gourd and few other veges are excluded. Cutting all veges in same size is a task in it self for beginners. Takda, garlic and onions too are excluded. But as you said there are many variations.

in avial v wont add mustard seeds , and for paste v add shallots too with coconut,cumin seeds,green chilly for traditional kerala avial. I am from kerala,am a big fan of you.. i just love your recipes ... keep rocking!!!!!

nice recipe and presentation..😊😊 In the authentic way of preparation, we dont add mustard and heated coconut oil.. just add a spoon of uncooked, unheated oil and curry leaves at the end of cooking.. it gives a nice aroma and is much healthier 😊😊.

Our beloved vah chef, everytime you get to taste the delicious dishes you cook all by yourself which is so totally greedy :) . How about shows with audience? I, for one, will surely travel to Hyderabad to take a bite. No kidding. Personally, what I love most about the food apart from the fact that they are delicious dishes, is the simple and easily available ingredients you use. Most of the times, we are able to try out them at home without a visit to nearby super market. God bless our chef.

No Turmeric Powder, Hing or even a shade of Shallot in an Authentic Avial.
Aviyal is mostly a Brahmin Dish. We do not add DRUMSTICKs or onions.
The way you showed cooking the dishes is great.
Will tell the authentic way and the veggies that should (and should NOT) go
into Avial in sometime. I am very busy now.

Kiran Prusty: Use coconut oil. Actually this coconut oil and mustard seeds gives you good aroma and taste. It is one of my favourite since childhood.
nooooooooooooooooooooooooooo... dont even dream of making aviyal without coconut oil----if you think coconut oil is unhealthy etc please read the latest research--It is the most heart friendly oil of all!

Veggies NOT to be added in Avial: Okra, Onion, Garlic, Ginger, Tomatoes, Bitter Gourd to mention a few that came to my mind. Turmeric powder is not used. Only Coconut oil should be used. Cheers!

I think uduppi style avial dont have turmeric...keralite uses turmeric other things u said was 100 % correct ..asofoetida too
I'm not malayali but I have lived amongst many malayali families all my life and they always added turmeric.
