Hey Vince I ought 2 flounders and it came out perfect and looked and tasted awesome. I freezer the other one for a rainy day. I had to cut the tail off so that it could fit in the large pot.
Good work chef, I got about 20 of them bad boys in the freezer after this last week of gigging, it’s amazing how there are so few videos showing how to fry a whole flounder
GM. Mr. Bill to be completely honest I never measure the internal temperature of my fish, I just cook it until it starts to float. But however the FDA recommends cooking fish to an internal temperature of 145 degrees Fahrenheit. The temperature of the oil is 350 degrees and it usually takes around 8-10 minutes to cook depending on how much oil and the size of the fish. I hope this information helps you. Have a great weekend

How much vinegar in water did you use to keep down the fish smell in the house?
En I use about a 1/2 cup of water and 1/2 cup of vinegar

I use the same two ingredients on all types of fish I cook.
Now that's too much salt on that flounder. I have high blood pressure and I will never put that much salt on mine or any of my family's food.
