CRISPY THAI - STYLE FRIED FISH | SHERSON LIAN

- This week’s recipe is a crispy fried whole fish with a lip-smacking Thai-style sauce to accompany it.
It’s my take on Thai-inspired fried fish. If you’re a fried fish kinda person like me then this is a MUST TRY!!
Ingredients:
- 1 whole Sea Bass (Ikan Siakap)
- 30 gm Ginger
- 50 gm Garlic
- 2 stalks of Lemongrass
- 3 bird’s eye chilies
- 2 nos Lime
- 1 handful of Thai Basil
- 40 gm Gula Melaka
- 1 tbsp Cornflour (coat fish)
- 1 tsp corn flour (make a slurry)
- 3 tbsp Fish Sauce
- ¼ cup water
- oil

Cooked this today, it was wonderful! The crispiness was so good- i think i didn't use enough oil when frying the aromatics as my sauce was really dry, but I’ll definitely cook it again until i perfect it
Yayyyy!!! Am glad you enjoyed it, yea you would need sufficient oil in frying the aromatics else the flavor would be slightly lacking. Diets out the window with this one 😆, but it’s so worth it!! Happy cooking!

As thai, i think ginger and lemongrass is not really necessary much here. Just thai basil, garlic and chilli taste more althentic.
Lemongrass and ginger taste better with steam/grill fish

Why double crisp the skin and then pour the sauce on it ?? Serve on the side or the flesh ?
