The Chicken and the Egg: Mastering Japan’s Original Comfort Food

  • Oyakodon, or chicken and eggs over rice, may be one of Japan’s simplest comfort foods, but done right, it can also be the most satisfying. Tokyo’s Tamahide restaurant has been setting the bar for oyakodon since 1891. Through eight generations of perfecting this gooey, savory dish, Tamahide keeps a strong tradition alive, and owner Konosuke Yamada intends to it pass on to his children. As customers willing to wait two hours for a bowl can tell you, here the chicken and the egg BOTH come first.

      I wouldn't speak so soon, some people eat drunken shrimp/scorpion, where said critter gets dunk in spirits so it's completely hammered, then the person eats them alive. I think I also read about this other dish where a fish is sliced alive so that the flesh is still on the body but in segments for easy chopsticks use and the person could eat the fish alive, but I'm pretty sure this dish was banned. Presumedly because of animal cruelty.

    To those that admire how easily the egg slides on to the bowl bowl of rice, actually the egg is "scrambled" on the sauce, not "sauce on the egg".
    You can see that for oyakodon, often they cook the sauce first before drizzling the egg mixture

    0:49 from what I know when making Oyakodon, you don't usually fully scramble the eggs like that so you can keep it's silky texture. Though if this is how they've been making them for generations, I wonder if under scrambling them is one of the newer techniques that's used. Looks amazing either way.

    • @greenhat7618
      @greenhat7618 ปีที่แล้ว

      The velvety texture is achieved by pouring the egg mixture into the dashi instead of cooking it directly in a pan, whether mixing the yolk and white fully is just personal preference.

      @@greenhat7618Correct! I worked at a donburi resteraunt in Osaka where katsu don and oyako don were our two most popular dishes, personally I find a less mixed egg really adds a nice texture and let's you enjoy the rich egg yolk and the firm white in different spots.

    i love that he says "tamahide's oyakodon" at the beginning. kinda hint-ing that it's not something *only* belong/entitled to tamahide region(city?). as all foods are, no one actually owns any specific kind of food (concept)

      Tamahide is a clan name xdddd, and it does technically belong to them since the Tamahide's originally made it. Belong but not "own"

    I like how Japanese eat. Their food is not so complicated, just simple and classic plain food but look very appetite.

    welp... people keep saying 'it's bathing the mother in its own child' but bruh, as someone that lives in japan it's a comfort food. like, true, it may sound gross or weird to you guys but it isn't weird for us. I don't understand how y'all minds can think of something like that the moment you see it. I've been here for a large portion of my life and I still haven't come across that thought once even though it's all over the streets and in japanese restaurants? I don't eat this dish as often as people usually do, but I see it almost everyday and it's not that weird. some dishes from other countries might sound weird to us as well but we can't just ruin it for them.

    Surprisingly that I ate there once and I'm able to replica the recipes. It doesn't taste the same perhaps because of the atmosphere but it's 90%
