ingredients
for the chicken
- chinese 5 spice, salt and pepper mix
for chicken bath water
- 1 tsp maltose syrup
- 1 tsp bicarbonate soda
- 2 tbsp diluted red vinegar
- 1/2 bowl white vinegar
- leave chicken to dry overnight before frying
- fry for 20-25min - บันเทิง
I just wanted to thank you and your mom for this recipe. Growing up in my small hometown there was a Cantonese restaurant that had the most amazing chicken wings. Try as I might, I could never replicate them. I just used your mom's recipe on some wings and they came out just as I remember them! 40 yr old memory brought to life! Thank you!!

It's free range chicken not runaway chicken, and you'll need to use a hook not tweezers to hanging up the chicken.
Seems a great recipe but what do you do with all the oil after? Would it be better to roast in oven?

Thank you so much for your mom's unselfish sharing.....I have one question, wouldn't the chicken meat might get spoilt to hang outside for a long hours?? I have not done cooking befor and wanted to try it out but it worries me on this particular process.
best to put in a shady area not near the sun, the chicken bath water shields the chicken meat so it wont get spoilt. or you can blow dry the chicken then deep fry for a faster process, im just scared if you don't let the chicken dry properly it might explode in the hot oil when you are deep frying which is very dangerous

Please could you let me know if I could use honey instead of maltose syrup and omit red vinegar?
it won't work, the maltose syrup is very thick so once you coat the chicken skin with the bath water a thin layer sticks onto the chicken skin to create a tight chicken skin for frying. the diluted red vinegar gives the chicken skin its golden color when you deep fry. Using other ingredients will not work. This is the original recipe used in Top chinese restaurants
