Now, keep this aside and on the plain tawa add some butter. 15. Add chopped onions, ginger garlic paste, a pinch of red chilli powder, some pav bhaji masala, kasuri methi, asafoetida, chopped coriander leaves and some lemon juice. 16. You may also add some colour to get that red tinge. 17. Once you've mixed this well, add your mashed vegetable mixture that was separated and kept aside. 18. Now, mix everything together and keep mashing until you get a thick mixture. 19. The bhaji is ready and now let's prepare the masala for the pav. 20. Heat some butter, add coriander leaves, red chilli powder and some pav bhaji masala. 21. Now split the pav horizontally and coat the masala on the pav. 22. Your dish is ready to be served. 23. Garnish with some coriander leaves, onions and lemon wedge.

Thank you for posting, Vikas. However, the secret is in the pav Bhaji-Massala - and that sadly wasn't revealed. Using a large tawa is a nice show, and it quickens preparation of large number of portions, such as on Juhu beach in Mumbai. I used a roti tawa for pav, and a wok for the bhaji. It took me less than half an hour (including cleaning the vegetables and cooking potatoes in pressure cooker) to prepare 5 portions for breakfast. We won't eat it too often, because of the extensive use of butter.

1 green bell pepper sauté in water to soften. 2 chopped tomatoes, 2 boiled potatoes mashed with your hand, 1 spoon chili powder, 1 large spoon ginger/garlic paste, 1 Cup peas, 1/2 tsp turmeric powder. Saute again with more water to become tender - then add 2 Tbs butter and mash the whole mixture well. Bring to boil and add salt and ????? Marsala ( a special blend of seasoning). Cook until oil separates. Now add onions, ginger/garlic paste, 1/3 C butter, pinch of red chili powder, 1 Tbsp Bhaji masala, 2 Tbsp dried fenugreek leaves, pinch Hing, lemon juice.
Pav Bhaji Masala powder recipe: Dry roast these spices & when cooled - grind to a powder. 2 Small black cardamoms 4 Tbsp coriander seeds 2 Tbsp cumin seeds 2 tsp black peppercorns 1 Tbsp fennel seeds 5 red dry chills 2 inch cinnamon stick 1 Tbsp amchur powder

As per what I could understand 2 large/ 3 small capcicum ¼ cup water (to soften the capcicum) 2 tomatoes 2 large/ 3 med boiled potatoes ¼ cup green peas 1 tsp red chilli powder 1 tbsp ginger garlic paste 1 tsp turmeric powder ½ cup water 1 tbsp butter (mix and mash) ½ cup water- let it boil a little 1 tbsp pav bhaji masala Salt 2tbsp coriander (Mash and stir till oil separates) 1 tbsp butter 1 small onion ¼ tsp ginger garlic Pinch of red chilli powder ½ tsp pav bhaji masala 1 tsp kasuri methi ¼ tsp hing 1 tbsp chopped coriander ½ lemon slice juice (Mix both mixtures. it was great to see how the man on the ground makes the dish. Was a bit disappointed to know they put very few vegetables-- peas, potato, very little capsicum. Yet they dish out such delicious stuff. This is a brilliant idea of going to the stall instead of having it in a posh kitchen.

Just a tip I would like to share . If you are making this for your kids or (your hubby who is nothing less than a kid), and want to enhance its nutritive value, than you just need to put a bunch of spinach and cabbage and lots of mashed potatoes to cover up the taste of the above 2. I agree it doesn't taste as good as this recipe but at least you can get your kids to eat some thing healthy. Many thanks to you Vikas ji for uploading this video though...

Saute again with more water to become tender - then add 2 Tbs butter and mash the whole mixture well. Bring to boil and add salt and ????? Marsala ( a special blend of seasoning). Cook until oil separates.
Now add onions, ginger/garlic paste, 1/3 C butter, pinch of red chili powder, 1 Tbsp Bhaji masala, 2 Tbsp dried fenugreek leaves, pinch Hing, lemon juice.

Pav Bhaji Masala powder recipe:
Dry roast these spices & when cooled - grind to a powder.
2 Small black cardamoms
4 Tbsp coriander seeds
2 Tbsp cumin seeds
2 tsp black peppercorns
1 Tbsp fennel seeds
5 red dry chills
2 inch cinnamon stick
1 Tbsp amchur powder
not fenugreek leaves, its Coriander.

Great recipe, thanks for sharing. As per what I could understand
2 large/ 3 small capcicum
¼ cup water (to soften the capcicum)
2 tomatoes
2 large/ 3 med boiled potatoes
¼ cup green peas
1 tsp red chilli powder
1 tbsp ginger garlic paste
1 tsp turmeric powder
½ cup water
1 tbsp butter
(mix and mash)
½ cup water- let it boil a little
1 tbsp pav bhaji masala
Salt
2tbsp coriander
(Mash and stir till oil separates)
1 tbsp butter
1 small onion
¼ tsp ginger garlic
Pinch of red chilli powder
½ tsp pav bhaji masala
1 tsp kasuri methi
¼ tsp hing
1 tbsp chopped coriander
½ lemon slice juice
(Mix both mixtures. Mash and mix)
For pav-
1tbsp butter
A pinch of red chilli
A pinch of pav bhaji masala
Some finely chopped coriander
Mix and roast the pav

it was great to see how the man on the ground makes the dish. Was a bit disappointed to know they put very few vegetables-- peas, potato, very little capsicum. Yet they dish out such delicious stuff. This is a brilliant idea of going to the stall instead of having it in a posh kitchen.

Just a tip I would like to share . If you are making this for your kids or (your hubby who is nothing less than a kid), and want to enhance its nutritive value, than you just need to put a bunch of spinach and cabbage and lots of mashed potatoes to cover up the taste of the above 2. I agree it doesn't taste as good as this recipe but at least you can get your kids to eat some thing healthy. Many thanks to you Vikas ji for uploading this video though...
