PAV BHAJI RECIPE
Preparation time 10 minutes
Cooking time 20-25 minutes

Ingredients
For Bhaji
1 medium size Cauliflower, florets, फूलगोभी
1 Capsicum, roughly chopped, शिमला मिर्च
½ inch Ginger, slice, अदरक
2-3 Garlic, chopped, लहसुन
Water, पानी
5 medium Potato, cubed, आलू
1 Carrots, pelled, roughly chopped, गाजर
⅓ cup Green peas, हरी मटर
Salt to taste, नमक स्वादानुसार
2-3 tbsp Butter, मक्खन
For Tempering
1 cup Onion, chopped, प्याज
1 ½ cup Tomato, chopped, टमाटर
2-3 Green chilli, chopped, हरी मिर्च
2-3 tbsp Butter, मक्खन
¼ cup Oil, तेल
½ tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
Salt to taste, नमक स्वादानुसार
¼ cup fresh Tomato puree, ताज़े टमाटर की प्यूरी
1 medium Capsicum, chopped, शिमला मिर्च
1 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
2 tbsp Butter, मक्खन
1 tbsp Prepared pav bhaji masala, तैयार किया हुआ पाव भाजी मसाला
Boiled & mashed vegetables, उबली सब्जियाँ
1 tbsp Butter, मक्खन
2 tbsp Prepared pav bhaji masala, तैयार किया हुआ पाव भाजी मसाला
Water, पानी
¼ tsp Sugar, चीनी
1 tbsp Coriander leaves, chopped, धनिया पत्ता
For Toasting Pav
1 tbsp Butter, मक्खन
A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर
2 Ladi pav, लादी पाव
For Masala Pav
1 tbsp Butter, मक्खन
Prepared Masala
2 Ladi pav, लादी पाव
For Garnish
Onion, chopped, प्याज
Lemon wedge, नींबू की फांक
Butter pav, बटर पाव
Coriander sprig, धनिया पत्ता
Process
For Bhaji
In a large pot or pressure cooker add cauliflower, capsicum, ginger, garlic, water, potato, carrot, green peas, salt, butter then cover and cook until soft.
Now mash everything properly with a masher and set aside.
For Tempering
In a large tava or a shallow pan heat butter, oil then add onion and saute until translucent.
Now add tomatoes, green chillies, ginger garlic paste, salt and saute until they are soft.
Add fresh tomato puree and continue cooking for 6-8 minutes.
Then add capsicum and continue cooking for another 2 minutes. Once done remove 2-3 tbsp masala aside for further use.
Now, add degi red chilli powder, butter, pav bhaji masala and saute for a minute.
Now, add boiled & mashed vegetables, butter, pav bhaji masala, water, sugar and continue cooking for another 2-3 minutes.
Finish the pav bhaji with fresh coriander leaves and switch off the flames.
Serve hot with toasted pav, onion, lemon wedges, coriander leaves.
For Toasting Pav
In a hot pan add butter degi red chilli powder and coat the pav in that inside out and toast it properly, set aside for further use.
For Masala Pav
In a hot pan add butter, prepared masala that was kept aside then coat the pav inside out properly and then toast it. Set aside for further use.

My 2 year old son Vihaan is your fan. He smiles when you smile and he loves when you say " butter ठोक के डालो". He also takes utensils from kitchen and imitates you and surprisingly he knows names of all the masala items and tells them one by one. The fact that pav is a direct derivative of the Portuguese pão somehow makes this even more interesting. The history you share has always been intriguing, but somehow we directly using a Portuguese word in our daily lives and owning it has woken up a deeper desire to learn food history now! Fun fact: Potatoes and tomatoes were also introduced to India by the Portuguese. They brought them along from South American to India. The words batata and tamata are Portuguese in origin.

Hello Cookery world ke Irrfan Khan,
As you know the word Pav is now for breadloaf, but also its a local word for "Quarter" or 1/4. That is because they took 1/4 portion size to make this small bun, so it has many names like Bun (which was the original name) and then also Pav (1/4)
Now, there is something that I might add, its not that hands dont get oily/dirty after eating Pav. Most of the Mumbai people eat Poli/Chapati at home for breakfast, the same would go for lunch etc. But Poli was never "industrialised" till now. Now there are few machines that can make Poli/Chapati on industrial scale with automatic cutting, roasting etc. Making dough is already automated using industrial mixer. So, because Mumbai was growing in 19th Century due to various cotton mills etc, there were a lot of restaurants. Many of these were Irani Restaurants owned by Parsees, they were also bakers as many of these restaurants had their own cakes, pastries, toast, Khari etc. these bakers made bread. A bakery in Mumbai would start at 4 am, as they needed to have bread read before 6 am to be delivered to local shops by cycles. So, once outside home there were lot of Bun pav available, these were cheap, made on industrial scale. So Pav was cheap, easily available at every small bakery or Irani hotels or even small food vendors from 6 am to Midnight. Before Vada Pav became a Fad and believe me, I know, the fad was to go to a Parsi restaurant, have a Bun Maska (Pav with a sachet of bakery made butter applied between the Bun Pav by cutting the Bun horizontally. I have seen the Parsees ordering the stuff by lowering their bags from say 5 storey buildings to the vendor below with cash, the vendor would then put the Bun maska and some fresh eggs, then the bag will be pulled. FASTEST DELIVERY.
In late 80s the Irani Hotels started to go out of business with new restaurants coming up, mostly Udupi restaurants offering fast service and different variety of food. Dosas, Idlis, Uttapams etc, the bakeries were there, This was an Era where Food on the go was being prefered, College kids had the pocket money that they would save & then use to eat with friends, that started the trend for small shops for Vada pavs, Bhaji Pav, Bhurji Pav. Do remember that you may not find many road side shops for Bhaji Pav or Bhurji Pav in day, these open MAINLY AT NIGHT.
So I can safely say that Bun Pav and Chai (made from milk) made the Irani restaurants popular, these restaurants were really restaurants where people could meet, have a long chat, eat and be happy, no one would want to ask you to leave, but that did hurt the profitability that fast moving Udupi restaurants were able to generate putting Irani hotels slowly & surely out of business. I have stayed in Bombay Central all my life, been to mill areas till Parel (when the mills were then working) National mills, Simplex mills etc.

The British & the Portguese did leave their mark, even brought food change. I mean Indians were not tea drinkers, and now every morning we drink tea. Anyway, there are few words that are there for food. Even the Quarter for whiskey etc is called Pau/Pauwa, there is famous song "chikni chameli"
Btw Paw would be attributed to Parsees who owned and made bread mainly for the English & parsee population, and some local people who were staying alone, so getting Paw was easier than making Roti.

Dear Ranbir , the mill workers never had Paav Bhaaji on working days . They used to get Home Tiffins delivered by World Famous Mumbai Dabbawals . Yes .. They Are World Famous ... Prince Charles when visited India long back , he also met them . Dabbawalas have a world record for highest accuracy for their delivery system . Secondly Paav Bhaaji has been a most essential mid day meal of Mumbai office job going people . I remember having famous Paav Bhaaji at Cannon Paav Bhaaji joint opposite CST station ( VT that time) about 35 years back . Yes around 1986-87 or so. Anyway , I like your style of making videos more than the food itself ,😃😃

Adding pinch of sugar to all salty foods brings up the flavor of the dishes....that's something told by Chef (as I remember)
