Red chilli garlic chutney Ingredients: * Oil 3-4 tbsp * Jeera seeds 1 tsp * Prepared chilli paste ½ cup approx. * Prepared garlic paste ½ cup approx. * Salt to taste * Pav bhaji masala 1 tsp * Garam masala 1 tsp * Jeera powder 1 tsp * Kala namak 1 tsp * Green chilli paste (paste of 2 green chillies) * Fresh coriander 1 tbsp (chopped) * Lemon juice 1 tsp Method: * Set a pan on medium heat, add oil and add all the remaining ingredients in order, stir & cook on medium heat until the oil separates from the chutney, your red garlic chutney is ready, serve as a condiment with hot pav bhaji. Assembly Ingredients: * Pav 2 nos. * Butter 2 tbsp * Red garlic chutney 2 tsp * Fresh coriander 1 tbsp Method: * Slit the pav in two equal halves, keeping the end intact. * Set a tawa or pan on medium heat, add butter, red garlic chutney & fresh coriander, mix and place the pav on the tawa, coat the pav with the butter completely and cook it briefly for soft pav, you can also toast it a little further if you want the pavs to be little golden brown in colour and crispier in texture. * Garma garam pav are ready, serve it hot with hot bhaji. * Your bhaji and hot soft pav are ready, serve it garma garam with some cucumber, chopped onions and lemon on side along with the red garlic chutney, and please do not forget to top it with butter on hot bhaji. * Enjoy this amazing street style pav bhaji with your family & friends.

As a Mumbaikar, i can assure you this the best pav bhaji recipe out here. My mom asked the pav bhaji vendor about the recipe around 10 years ago and the guy gave exactly this recipe. Sanjyot’s recipe is exactly the same as the pav bhaji guy. Guys just follow this guy, he always makes the best food.

I've made this like 8 times already. It's super simple if you break the prep and cooking into two separate activities. I love how detailed this recipe is. He went over each and every step in detail and explained it so well. I didn’t have that huge tawa otherwise my bhaji’s consistency would’ve been exactly like his. Nevertheless, it came out so goooddd. So here’s a tip for anybody who doesn’t have the tawa thingie, you can use a kadhai instead but remember to mash all your veggies prior and then add them because otherwise it becomes a task and the veggie pieces remain chunky no matter how much you try to mash it while making. Yup that’s that. LOVED THIS RECIPE! It came out so well. I’m gonna make this again and again

Okay, not gonna lie, the prep took me 3 hours as I was doing every step very carefully but it was definitely WORTH it. This was the best method of making pav bhaji and the chef sanjyot keer not only showed how to make pav bhaji but he also showed how to make homemade pav bhaji masala and Kashmiri red chili paste and last but not the least the guy who showed how to make pav bhaji was really very different from other chef no show off, no fake english accent not thinking of himself being great he was really good and natural he sounded very humble and sweet 😊👌👌
