Generally the rule is 1 cup dal : 2 cups water and if you soak over night then you can do a little less than two cups. If there is too much water, cook a little longer without the lid and it will reach the right consistency.

Wrongly defined the origin of word. In Punjabi 'urad' is called Mah. Rajmah or kidney beans has nothing to do with it though it added for enhancing flavour and colour.
