    the only thing I would do different would be either put a ham bone or prosciutto bone in the bottom and make sure its a meaty one or skip the bone and add a really nice white chicken stock any chance to add flavour should be taken as water tastes of nothing but broth tastes of the meat it is based on... also keep the bay leaf in as long as you can and we played a game in our household ... whoever got the bay leaf in their bowl was the designated dishwasher

      sounds great, adding broth would definitely work but works ok without it as well. I might keep the bay leaf next time and pour the soup out myself to ensure the bay leaf ends up in someone else's bowl, not mine, haha. Thanks for your tips.

      Broth might be nice but sauerkraut is flavorful enough, and if you wanted to make it vegetarian skipping the meat stocks might be a good idea, although I would supplement with some white wine

    I make the soup with the Spanish paprika sausages, choriso, instead of panceta and a roux of flour and butter to thicken the soup.

    I made my own sauerkraut for the first time last autumn and I will so try this recipe!! Looks very yummy! Not sure where I can find caraway seeds here in the UK. I'll try our local European shop 👍🏻

      Hi, I live in the UK as well, you will be surprised how many places sell caraway seeds... Tesco, Sainsbury's, Waitrose, Morrisons I would say it's easier to find that marjoram but even marjoram can be found in supermarkets. I think it's one of those things - you don't know that it's there as you've never needed it. Let me know how the soup turns out. I hope that you will enjoy it.
