My mouth is watering too. The addition of marjoram at the end sure does give the soup that Polish flavour. Here in my part of Canada, parsley root is not easy to find, so I substitute with parsnip. Makes a little difference, but still delicious in most of my soups. Keep making us smile.

I cannot understand why parsley is underestimated in Anglo-Saxon countries. In Poland, parsnips are fed to pigs. Parsley is very easy to propagate, order seeds and leave a few plants in the ground and you will receive plenty of seeds for the second year

Saurkraut soup is an altimeter favourite. Rather than ribs and bacon I buy good kielbasa, cut into chunks and add it into the soup while its cooking. On occasion I'l also add some sliced mushrooms.

if you like it healthier is cooked meat. I recommend lovage and Italian celery as spices. Be careful with lovage and celery in the summer heat, the skin becomes sensitive to the sun

Hello, I am a third-generation Polish-American trying to rediscover some of my family's recipes. What would you think in this recipe of removing the ribs and bacon and substituting kielbasa and pork hocks, possibly smoked? Also, if using kielbasa, would you suggest cutting back on the allspice and marjoram? Thank you, this video was wonderful!!

I was brought up on Polish cooking. The food in my opinion is fantastic. The whole idea of Polish cooking is the subtle flavors. Not many spices are used. Flavors were made with readily available ingredients. Sour cream, caramelized onions, dried mushrooms, etc. Polish cooking is not popular in American homes because of the time it takes to prepare most meals. Unlike say Italian cooking, all you need to do is boil a box of pasta and open a jar of some sort of tomato sauce. You probably never had Polish baked sweets, such as keiflies, placzek, or krucziki.

Great idea about the stove! Sauerkraut soup was the first soup I ever made! We got a kitchen-full of cousins one day who came to hunt, and my dad said make a pot of soup, and they all left! I had to call my aunt Mae to ask her how to make soup! She talked me through a sauerkraut soup and everyone loved it! It's always been one of our family's favorite soups! We used to make sauerkraut every year - like 40 quarts or more - and so we found lots of ways to eat it! I love watching your videos! Keep them coming!

Thank You! Subscribed, Yeah, I only recognize 2 types of sauerkraut, regular, (cabbage and salt), and What we call Bavarian style, (cabbage, salt, and Caraway seed), and every sauerkraut I've ever seen in a bag, has preservatives in it, which bothers me because that's why we ferment cabbage, to preserve it.

German style sourkraut with vinegar? That must be a American thing. I don't think any German in Europe would touch that stuff with a barge pole. I've never even seen it anywhere in Europe. Just like so many American TH-cam cooks say they're going to cook Swedish meatballs. And then go ahead and make something that more resembles Italian meatballs, with the wrong spices and swimming in a tomato sauce. Also boasting there's "no fillers" in their recipe. It's the bread, cream (or milk) and egg that makes them so tender! I'm rambling, but all these misconceptions "over there" are rather funny.

I made it today! I used four large country style ribs because that’s what my store had. When they were done, I removed them from and shredded the meat from the bone and added back to the soup. Since I’m a “newbie”, I rinsed my kraut and drained it. I then added it to my bacon/onion and covered and let simmer. This way the kraut was cooked when adding to the soup. It’s soooo good! Thanks Anna!❤️😘

I have several pints canned, and a nice big jar of fresh in the fridge. Have a couple of pints of broth made with smoked turkey bones, so pick up some meat and I'm ready to go.

Wrong!!! Cabbage should be cooked at least 1,5 hour to be soft and to loose sourness. So I cook sauerkraut separately and mix it with the rest (bullion+potatoes+veggies) on the end. I never cook it together because acid makes ingredients hard - especially potatoes.

@@maciejszymanski2386When we always cook this soup at our house, we cut the sauerkraut, put it in a pan with a small amount of fat, cover it and stew it until soft (max 30 minutes) and finally add it to the soup.

Made this last weekend. My husband finished it off behind my back. What makes that amazing is that I've seen him settle for toast and jam if he has to get anything out of the fridge himself. Definitely a recurring soup over the next several months.

I’m from a 100 percent Polish family. I married a men that is also from an 100 percent Polish family.
My mom used to make this soup. It was delicious. I never learned how to make it and now my mom has passed away. I’m trying to find someone who makes it the same way. But no luck yet.
My mom put salt pork in her soup. Also some kind of peas. They were yellow peas.
My mom came from Krakow Poland. Maybe they made the soup like she made it in that part of Poland. .
If you can give me any information of how they make it in Krakow.
My mom’s soup was thick. Some what like yours.
Thanks for any help you can give me.
I do enjoy watching your videos!

Susan, try adding dried yellow peas to the stock BEFORE sauerkraut is added and cook until they are soft. Then add sauerkraut and continue with the recipe. Let me know how it turns out.

My Gram used to make the best sauerkraut soup. She would make it for me and send me home with container of it! I honestly wish with every thing inside of me that I would have learned her recipe! I believe that she used to put beans (lima-dried) in it. Have you ever heard of that? She also used Kielbasa. It was absolutely wonderful!

Hi Roxanne, thanks so much for sharing with us. It is a shame when family recipes are lost to time, that's the main reason I started PYK. I don't remember ever hearing of anyone using lima beans in this soup, but I can't see why it wouldn't be wonderful! Thanks for watching!

My mother used to make souwerkrout soup, she called it Kupushka, I never liked it. It was so tart I could not stand it. Years later I learned that her mother, my grand mother was Lithuanian. Then I started learning about Polish cooking without Lithuanian influence, and it was so good ! Thank you for your channel which I have just found. From a 3/4 Pole and 1/4 Lithuanian.

Hi-Czesc. I also add some dried wild mushrooms soaked in hot water for 3 or 4 hours, both mushrooms and water. Adds something to this great soup. Question: My Grandma and Mom (originally from Kresy) would take a spoon of flour and mix it very well with about a cup of sweet cream, and then slowly pour it into the soup stirring constantly. Or slightly brown the flour and then add the cream, and pour it into the kapusniak. (Adds another dimension to this soup.) Is the addition of flour and cream a Polish thing, or more a custom from Kresy. (Now Ukraine and Belarus)
