Nailed it again!! Now I am going to have to get the Bacon cure as well. do you thing you could mix this and put in the pans and then freeze it? I only have so much smoker and we are going to be makin Bacon, Summer Sausages, Brats, and snack sticks with all that Elk I mentioned in your last videos comments. SO, I was thinking we could get it all made and then thaw it a few weeks later and get it smoked up. This Bacon looks wat easy and you wouldn't need a stuffer. I like that idea!!! I have a good digital scale and a slicer but no mixer or stuffer yet.

Ok this was great. But I must confess, when I first saw the finished product I thought to myself " cool, a giant Spam". In the back of my head I heard " spam spam spam spam wonderful SPAM! "😁👍 But really it looked great. Ricer I must confess I like your venting system for the smoker. Are you using a fan? Or just direct to the outside? Watching your vids I'm seriously thinking about moving my IVS into my barn. I'm not seeing any smoke in the " studio " so it's working pretty darn well. Not only good for winter but I believe summertime cooks could be " air conditioned" , oh that would be soooo sweat. And no skeeters 🦟😱. Anyway time to get to work. Great video again my friend. I do have an exhaust fan in the window for the LSG though. When I open that pit up it gets a little crazy!!! hahah My plan is to have an addition hopefully by fall. Then I will have a cooking area, setup the same as this one but I will not heat or cool it. But there will be plenty of exhaust fans and a new donger!! I got a great idea but not sure I can pull it off yet but I want that one to pivot!! There is not much heat coming out of these smokers so the pipe does not have to be double walled!! Then this studio will be all prep and taste test area! So I can heat and cool this part with ease!!! Like always thanks for watching Victor!!

After watching all these BBQ/smoking and charcuterie channels I don't know if I know what Bacon is anymore. What is it that makes bacon, bacon and ham, ham? They're so close and delicious. It doesn't really matter in the end smoked meats seem better no matter what it is. I'm really curious about the real Canadian Bacon (pea meal bacon) which is a form of back bacon. Have you done pea meal bacon yet? It should be cheaper to get a loin or half loin roast to make it. Nice video I like the use of ground meat. If not bacon like you just made a huge venison stick/meatloaf yum!

It runs straight out. It is just a wood stove chimney with some flexpipe so I can adjust to the pit I am using! I have an exhaust fan in the window to catch what comes out of the pit when I open it up. I hope to have an addition by fall and that area will mainly be used for cooking.
