How to Make Venison (Deer) Bacon at Home | The Bearded Butchers

Today, The Bearded Butchers are making deer bacon! This venison bacon recipe isn't for the faint of heart, but it's a lot of fun to make and the same process can be applied to any lean meat or game meat. The deer bacon recipe we used today uses a number of different projects that we have available in our store along with a wealth of knowledge for free, right here on TH-cam! Follow along as Scott and Seth take another animal from field to table and show everyone the right way to use every bit of every animal that they harvest.

Full Venison Bacon Recipe:
1) Mix 12.5lb venison trim with 12.5lb pork trim for 25lb meat total (meat should be as cold as possible so keep in the fridge until you're ready to start).
2) Mix meat together with maple seasoning kit and cure (If you want to avoid sugar, add 7oz salt instead of the maple seasoning). Feel free so add some other things here as well like our jalapeno powder or hot or cajun seasoning for some heat or some of our diced fruit for a sweet and fruity option.
3) Grind seasoning, meat, and cure mixture twice. Coarse grind first with a 10 and a finer grind second with a 4.5. Check out MEAT! for a grinder, we recommend 1.5hp because it's the only one with enough power to run the mixer too. meat-your-make... @meat2936
4) Mix the meat after the grind. Check out MEAT! again for a mixer meat-your-make.... Mix forward for 4 minutes, then in reverse again for 4 minutes. Add some ICE COLD water during the mixing. Two 16oz bottles of ice cold water (32oz total) should be enough.
5) Form the loafs in lined pans. Coat the loafs with 🧂 Cinnamon Swirl bit.ly/3Lbop3F or Black 🧂 bit.ly/3MRa9hA. Blends with sugar (Black, Cinnamon Swirl, or Hollywood) are the best for bacon.
6) Cover and refrigerate overnight.
7) Lay down some butcher paper bit.ly/3A5WbAQ to keep your processing area clean. Flip the pans and dump out the formed meat slabs onto some smoking screens like these amzn.to/3r2aBgP. Season the exposed sides that hadn't been previously seasoned.
8) Get the slabs on the smoker at 185 degrees F. Check out Grilla's end of summer sale grillagrills.p... for a CRAZY price on a grill with 160# of pellets! @GrillaGrills. (You can TURN ON a GRILLA from your PHONE!).
9) We smoked for 180 degrees F for 4 hours then stepped up to 200 degrees until the bacon hit internal temperature of 150 degrees F. Pull them off of the smoker for about an hour to rest, then put them in the fridge overnight to firm up.
10) Slice the bacon on a MEAT! deli slicer meat-your-make....
11) Cook to perfection and enjoy! Check out the MEAT! kitchen knife set to finish everything up meat-your-make....
12) Vacuum seal the rest of the bacon (if there's any left) with the MEAT! vacuum sealers meat-your-make...

My grandpa owned a butcher shop for a long time and continued to process meats for years after. Growing up, his venison bacon was my favorite and I still make it to this day even after his passing. His butcher shop was known for his variety of bacons so it is nice to see more butchers take in these varieties of styles of bacon!
My local game processing shop does deer bacon like this. It’s phenomenal. Don’t have to fry it, can eat it cold like lunch meat. I like putting it in a wrap with some horseradish sauce 👨🍳

when we make venison bacon for BLT sandwiches we use a bread loaf pan to form it before placing it into the smoker, after its smoked and sliced its perfect size for the sandwich

I made 18 pounds, 3 pans. Tweaked each one, jalapeños in 1, cinnamon swirl another, and red pepper flakes & cajun seasoning in the other. Outstanding! so versatile too. Even made a pizza using the bacon pieces. Wonderful po boy sandwiches! Thanks for sharing!
I used your DIY maple bacon kit. I've been making bacon for about 4 years now. Your product was great and easy to use. I did add liquid smoke to it. Before I would use real Maple syrup in my bacon, but it never did get enough of that maple flavor. This kit works great.

Why would anyone complain about the gloves? Seriously, I'd be more concerned if you guys weren't wearing nitrile gloves. I started using them when I apprenticed and I'll never stop. The feedback is wonderful and I like to keep my hands clean.

If the product is for personal use it’s kind of wasteful, not that big of a deal when doing large batches but there’s people who use gloves just to form some ground beef into burgers or to dice a bit of garlic
Only real problem is using a water bottle instead of just taking a measuring cup
@@dantethunderstone2118 It is however, safer. And they're making a family sized supply. If I was making enough for multi families, personal use or not, I'd still glove up. It's not as if the gloves themselves are expensive, and Whitefeather can probably get them even cheaper than I do.
@@SableDrakon more it’s bad for the environment since they can’t be recycled, with a large quantity like this then yes you should wear gloves (altho not necessary since it’s for personal use) but there are times where they’re essentially just making a roast or a steak or something but they still wear gloves which is very unnecessary
I use gloves for personal use too but not every time I’m handling meat because it really isn’t necessary since soap exists

Personal use has absolutely nothing in the world to do with safe food practices🙄. Good luck keeping the elderly and toddlers in your life alive🙄
Just saw this vid about a week ago. Got me thinking. I had just ordered a new slicer, I had a pork shoulder roast and a 2lb pack of ground turkey in the freezer, have a bottle of Black left, still have Prague #1. Figured I could make this work.
Holy smokes...! Ground everything, seasoned it with salt, sugar and cure, mixed it for about 10 minutes in a kitchenaide and formed a 2300g loaf. Smoking took 6.5 hours, but, like you, I started @185° for 3.5 hours, then turned it up so I could finish.
After chilling, slicing, and cooking, it came out wonderful.
Very excited for the DIY kits. Watching your channel has me thinking I might finally get my hunting license and go out during deer season. Homemade venison bratwurst? Yes please, and I think my friends would enjoy them too 🙂
We have been making moose bacon for over 20 years. Same process you demonstrate, just different seasoning mix. I do not use a cake pan. We used disposable aluminum loaf pan with wax paper between the loaf pan and ground meat.

Looks excellent. We processed two pigs today and made some sausage. The trimmed fat goes in the freezer and is waiting on a whitetail. Gonna make this bacon!

Man am I glad I watched this video. There is a butcher east of St. Louis I take some deer meat to and have them make it into bacon. I went out to look in the freezer in the garage and found a couple pounds from last year I forgot about. I know what I’m having for breakfast! Its so good I make the two hour trip twice just to get some. I think they say they use 2 pork to 1 deer on theirs. Not sure but it looks like they make it in a bologna shape and then flatten it a little into an oval then cut it to make into half moon kind of shapes. I’ve cooked it on a griddle and on a grill. Just be careful on the grill if you leave too long it will catch fire and burn to nothing. Love your vids as usual. Really nice to see how things are done. I may try the deer bacon myself next time. One suggestion for your DIY kits. Make the kits for smaller batches. Instead of 25lbs. Maybe 12lbs.

I made deer bacon for the first time this year using the LEM kit. I added a lot of pepper to it and made pepper bacon. It was awesome. Now I think I want to try your sugar maple🤔🤔🤔👍

Im so glad you gave those of us not in USA (and not sugar addicted), the salt amounts to make our own. 7 😅ounces of salt in 25 pounds of meat is 1.75% salt for us metric nerds

@BroCallMeCai sweet bacon is pretty rare in most of the world. I was disappointed to see most north American bacon, unless marked 'no sugar' had sugar in the cure (although not generally as much as this).

A recommendation for a future video, how do you Clean your equipment such as your grinder and all the attachments that come with it.
I just made this venison bacon after watching your video. I don't really taste much of a bacon flavor in the finished product. It has a real good flavor, but just really tastes like my jerky I make. I'm glad about that though. That's better than wasting 10 pounds of venison.
That grinder is amazing. Just used it On Saturday. Ground 40 lbs in less than 15 minutes

How much of a difference would it be to use the pink cure and cold smoke method?
If you haven't tried it go to a good processor or make some yourself with the items they have for sale. I prefer a well made venison bacon to any other. My wife and I love it. It's also a little more healthy for you in that it has signifcantly less fat and no weird chemicals, presevatives or colorings
I know this is a few days old but I have a question for you guys.
I really enjoy all your videos and i am a subscriber. My question is how particular are you with your venison trim? how much do you "clean up" your trim for grinding? I may be wrong but I as well as others would like to see a video on your exact method of how and what you grind ie.how much you clean it up before you grind... thanks guy keep posting vids, we love um....
We’re picky. No blood, no connective tissue, and nearly all the fat come out before we grind

@@TheBeardedButchers the place is called Livingstons custom meat processing in hopkinsville ky. They also make a deer ham. I haven't gotten around to trying it but u was recommended by the some of the guys who work there. I'd like to see yall take a stab at it too.

What number do you run on that slicer for your bacon for that thickness? My wife just got me the 10" meat your maker slicer and I'm wanting to make bacon! Also, how did you get a carry handle with your grinder?! My 1.5hp meat your maker grinder is handle less. Toting that big boy around I feel like my back might give out 😅 . A handle is amazing idea.
I used green cherry wood when smoking and I think it made everything taste like just smoke without good flavors

I appreciate that you've worked hard on your ever increasing product line, and spent years coming up with specific spice blends, bur for those of us not in the market for expensive blends, that still want to make a good sausage, or cure this bacon correctly, could you give amounts for regular sugar/salt combos, or certain seasonings that could work, with the amounts?
7 ounces of salt and up to 3 ounces of a couple other spices will do the trick. If you’re using sugar too go with 10-16 oz of that. So your over all amount to add to 25lbs could be as much as 30-34 ounces

To step up you BLT sandwiches prepare the bread like a grilled cheese sandwich instead of just toasting the bread. It is hard to improve on a BLT but this addition is a huge step up in flavor town.
