Today I'm sharing my best chicken satay with peanut sauce recipe! This satay chicken is a blend of Indonesian and Thai chicken satay. It is one of the most flavorful street foods that can easily be made at home. Try my delicious chicken satay as an appetizer for your next party or an easy meal that you can enjoy over the week!
INGREDIENTS:
1 lb/450g chicken thighs (boneless,skinless)
10 skewers (bamboo)
MARINADE
1 tbsp thai red curry paste
2 cloves garlic
1/2 inch ginger
1 stalk lemongrass
1/4 cup/60ml coconut milk
1 tbsp curry powder (1/2 tbsp coriander powder + 1 tsp cumin powder + 1/2 tsp turmeric)
1/2 tbsp sugar (brown, white or palm)
salt (to taste)
PEANUT SAUCE
1 tbsp Thai red curry paste
1 tbsp Masamman curry paste (or red curry paste)
4 tbsp peanut butter
1.5 cups/350 ml coconut milk
1 tbsp sugar (brown, white or palm)
1 tsp oil
lime juice (to taste)
salt (to taste)

Thanks. A beautiful recipe. Coincidentally, I made this during the week and it turned out well. I ground up some dry-roasted peanuts and added them to the sauce to give it texture.

The peanut satay sauce came out far too runny with the 1 1/2 Cup coconut milk. I suggest much less coconut milk and using coconut oil to fry the red Thai curry paste for extra fat content.
I used 1.5 cups in the video and it was not runny at all. Did you cook it for a few minutes after adding the peanut butter? It should thicken quite a bit.
