hi, a little tip from me since we have something similar to your scrambled pancake in Austria which is called Kaiserschmarren. You could also let the pancake bake a little in that big patch and then start to scramble that would make it a pit easier but please do what you enjoy. Cheers
That's Kaiserschmarrn an austrian dish, named after the Kaiser(Franz Joseph). We make a thick dough, make thick & big omelettes, then we shredd them into mouth-big pieces.... give them into the oven till the other omlettes are ready and shredded. Put some powder sugar on it and we eat plum kompott with it 🤩😍😋🎉
