There really isn't a legit way of making it...I mean I'm from Shandong and people would assume all jianbing over there are like super tough and have no topping, but the jianbing we use to make jianging guozi - which, btw, is basically burrito - are made from super watery batter, even more loose than this.

Although I am not sure where 煎饼果子 was originally invented. Austin, the one you showed in this video is more on Shandong type side. But if you finally decide to go for Tianjin. you will have Yummy chance to have another type of 煎饼果子 which is softer and just a hint of chewy。

Jian Bing Guo Zi is from Tianjin City, a very major city of China right next to Beijing. Jian Bing itself was invented from Shandong, it is just the (Corn, Mung Bean, Soy Bean, or other kinds of beans)meals puree made into very very thin crepe. Right after they make the crepe while it's still hot and kind of soft, they fold it into squares. After the folded crepe becomes cold, it becomes very very hard to chew(That's why Mexican corn meal made food required a lot of lard or butter or other types of things just to make the corn meal moist). It is the type of food for poor people long time ago, because these crepes(Jian Bing) fill you up really quick, because they are dry, tough to chew, and require eaten while drinking a lot of water. And they are difficult to digest. Now a days, these crepes themselves are more considered as snacks, because people mix the corn meals or other type of meals with flour to make the crepes, and dehydrate them completely, so they become very crispy. It will taste like tortilla chips now.

Its likely salt, but to be honest, this lady is not cooking it traditionally.... The way she's cooking is weird.... The dark soy bean paste should have provided enough saltiness. TH-cam Jian Bing Guo Zi, you should see others cooking this.

kind of, tianjin was a military camp during late qing , the majority of its military personnel come from shan dong, so,its origin is indeed shandong. with a little localized ingredient of the capital city

i'd say jianbing is just kind of thin 饼 from shandong, but what u eat is jianbingguozi(煎饼果子 from tianjin天津) with all sutff in it, they r different, and jianbing itself is very bad. the stuff in ur video is not authentic, the bing should made by some liquid flour. remember jianbing is bad, jingbingguozi is nice.
