I enjoyed watching your cooking for community videos. I didn't realize I would be batch cooking for my mom and step-dad. He was recently diagnosed with Parkinsons and dementia, and my mom doesn't cook. I couldn't stand to see him eating nothing but Tacobell and premade snacks. So, I started preparing meals for them the last couple of weeks. It's been a bit overwhelming, but remembering your Cooking for Community videos, helped me push through that. I plan on re-watching them for ideas. Thanks so much for doing your videos! They've been so helpful!❤
I'm part dutch, and we cut up and cook the kale and potatoes, then mash together with some milk and butter. Add smoked sausage on the side and gravy for the mash. So good 😋
One of my favorite ways to eat kale is as a kale Caesar salad. So much of the magic of a Caesar salad is the dressing, and the kale holds up so well to it. Definitely worth a try.

Soups are awesome! I'm always up for more soup content. Maybe trying soups from different parts of the world? I'm Czech and one of my favorite local soups is made with mushrooms (often dried porcini, but the recipes can differ), potatoes, cream, dill and served with a boiled/poached egg. It's called kulajda. I also love a good hearty borsch.
I substitute Italian style turkey sausage in my zuppa and use 2%.. I cook the potatoes and take out half and mash them and return them to the pot.. it thickens the soup well
I love kale in tomato soup. I don't know why but I can eat it several days a week. I added it to make it healthy but now I love it. Also, kale is so easy to grow. No kidding. I am NOT a gardener. I don't grow anything. But I have 2 large pots of kale going all the time on my patio and it grows with me doing nothing but watering it. And half the time I forget that!

Well-Bred Kale Salad 1 lb fresh kale, stems removed, finely chopped 4 Tbsp olive oil 1-2 cloves minced garlic 1 Tbsp lemon juice 1/2 Tbsp black pepper 1 cup dried cranberries 1 cup slivered almonds, toasted 1/2 cup parmesan cheese Salt, to taste 1. I like kale sautéed with bacon and garlic as a side. It’s heartier than spinach and I like the texture better. I think I put it in a frittata once because I was out of spinach. I did cook it a little first. With bacon. 😆
Could you do a series of 2 weeks of affordable sandwiches? 1. Fast food lunch can be expensive. 2. Bolonga and hot dogs get boring. 3. Lunch should give you energy for other half of the day. This could help home schoolers, work-at- home types, brown baggers and people like me stuck in a rut. You could call the series 'Super Sandwich to the rescue!'

I make kale salad so often. Kale. Nuts. Apple. Dried cranberries if you can get them. Cheese if you have it like white cheddar goat cheese or feta (or just some grated Parmesan) and a simple vinaigrette dressing. Full of nutrients and so easy and delicious !
❤ I will dice a couple inches of the Dollar Tree smoked sausage saute it with a couple tablespoons of diced onion and some bell peppers (if I have them-I'm a scrap saver). Then add in a few handfuls of kale and that's a very nice side dish.
Yesssssss. I LOVE THIS SOUP!!! I use turnips instead of potatoes to keep it low carb but it is incredibly delicious!!! I also add a bunch of red pepper flakes to mine because I like it a little spicy.
This soup is very versatile when it comes to substitutions. I’ve used heavy cream and evaporated milk. I recently used the Irish O’Garlic sausages instead of Italian and it was still good.

I used to make bread when my husband and I were first married. Our bathroom was small and the vent was beside the toilet so I sat my dough on the lid of the toilet and it rose beautifully! I still make bread but I let my mixer knead the dough!
I never used to like kale until I started freezing it and putting it on top of a pasta bake or tray bake it goes really crispy and tastes good! I only eat kale cooked this way

I love zuppa toscana...it's one of my favorites. We sometimes cut the carbs a little bit and use cauliflower instead of potatoes (it works well for those who want to stick closer to a keto-type of diet).
Years and years ago, someone I knew used to make a pie with kale and cheese, I think it was Fetta Cheese. The recipe was either Greek or Greek-inspired. It was truly delicious. I don't know what sort of pastry though. I seem to remember that it may have been filo. Thank you for the video! You brought back some memories today!

Chicken chowder with dumplings. 2. Broccoli and cauliflower cheese. 3. Chili or cheeseburger soup. 4. Chicken or beef and vegetable. 5. Potato ham chowder or baked potato.
I vote for the ham potato soup. I've been making the olive garden soup as one of my specialties for thirty years. I use breakfast sausage, onion, garlic, broth, potatoes and CARROTS, and I add spinach to the bowls and ladle boiling soup over it because the leftovers keep better without the greens. Topped with tons of parmesan and/ or a slice of american cheese.

This was my late husband's favorite soup. I made it once for him and he said it was so close to the OG's :) Working with dough is my favorite. Kale is so nutritious. Baby kale is more tender if you want a salad. 🥰👻🎃🍃🍂🍁 Wonderful job on this !
My middle school actually sold Taco Bell Chili Cheese Burritos at the snack window. They were in full on Taco Bell branded packaging. Like the kind individual freezer burritos are sold, but Taco Bell. They were my favorite and always sold out fast! I graduated in 2006, so this was a long time ago lol.

I made this and used frozen cauliflower instead of potatoes. one because I had it and two because it's less carbs. I also used spinach instead of kale again because I had it. It was awesome.
I’m not a kale person but my friend loves making kale chips - basically chop, massage with oil, put on pan with salt and pepper and bake until crunchy.

I make kale and beans pasta - box of pasta, bunch of kale, and a few cans of some sort of white beans, tossed in olive oil, spices (salt, pepper, garlic powder, and red chili flakes for me) and Parmesan.
I have some chili and chicken enchilada soup in my freezer, and tortillas in my pantry, I know what I’m having for dinner tonight! I have loved this series. Great ideas, and you finished the series on my absolute favorite soup! Can’t wait to make the zuppa tuscana myself!

I love the Olive Garden Chicken Gnocci soup. I buy the Gnocchi at dollar tree and I sub the spinach for kale because it is cheaper. I've had it both ways and I like the kale version better. It is a fairly inexpensive soup to make and you can stretch it and make it feed a crowd. Love watching all your series! 😊

great soup series !! i live in tuscany and kale is my new favorite winter veg. there are SO many things. i usually cook it in an olive oil, celery, carrot, onion sofrito. about 45 minutes, ending with most of the water cooked off. this is delicious served with white beans. usually, we have them as sides with some sort of roasted pork. then, i make a soup of all of the leftovers. and some cornbread. because even though i live in italy, i am a southern woman. fried puff pastry served with beans and this same kale on top make a great starter !! buon apetito !!
I love kale just chopped and wilted/sauted, seasoned with salt, pepper and a touch of vinegar! Any green, really, is delicious like that as a side dish!
Very fun series. Cracker Barrel has a kale slaw that is really good. I grew kale several times in my garden. It's so easy. I made a lot of kale chips. There are several recipes online. They are healthy, easy, and addictive. I would like to see what you would or could experiment with the vegetables you aren't familiar with. #1 suggestion for kale, take out the rib, chop, and massage (scrunch with your fingers) and then add it to any pasta salad recipe. it adds a ton of vitamins and minerals. tastes delicious with anything vinaigrette based. the key to eating it raw is the massage, breaking down the cell walls mechanically like that really gets rid of the bitterness and makes it tasty
You're lucky our kale is 3 little leaves for 5.99. But I buy it cause yes I love kale. Loved the series. I am a soup eater, anytime of the year. That was our main stake when growing up. Thank you for all you do, I appreciate it.⚘
I've done chili with rice in burritoes, scrape butter on the burritoes then crisp in the oven for 5-10mn, then turn over for 5-10mn to crisp the other side. They are delicious!
I make a frittata for breakfast occasionally. I use kale and any peppers, mushrooms or any other veggie I have left that needs to be used. Plus lots of cheese. My husband loves it.

@@Sedhill wish I could’ve he’s so picky that 1/2 the time he refuses things. I don’t want to rock the horse since he does work 14-16hrs 6 days a week
@@lindabader3857 true, but i def recommend it for you! spinach is good & healthy but kale is better i think from when i remember doing research. tell him he'll need it for the winter lols idk the texture just fits so much better. oh and if he's picky and you want to try new things highly recommend just doing it for yourself! dont be afraid because he's afraid . i was semi picky, but love trying new things but even if i know i wont like it sometimes i'll try it then i'm surprised that i like it
I make kale and beans pasta - box of pasta, bunch of kale, and a few cans of some sort of white beans, tossed in olive oil, spices (salt, pepper, garlic powder, and red chili flakes for me) and Parmesan.

I make this and sometimes substitute Tortellini or gnocchi for the potatoes. We serve it with Texas toast gaelic bread. The broth is the absolute best part of this soup!!!

I love the Olive Garden Chicken Gnocci soup. I buy the Gnocchi at dollar tree and I sub the spinach for kale because it is cheaper. I've had it both ways and I like the kale version better. It is a fairly inexpensive soup to make and you can stretch it and make it feed a crowd. Love watching all your series! 😊

i live in tuscany and kale is my new favorite winter veg.
there are SO many things.
i usually cook it in an olive oil, celery, carrot, onion sofrito. about 45 minutes, ending with most of the water cooked off.
this is delicious served with white beans. usually, we have them as sides with some sort of roasted pork. then, i make a soup of all of the leftovers. and some cornbread. because even though i live in italy, i am a southern woman.
fried puff pastry served with beans and this same kale on top make a great starter !!

I love kale just chopped and wilted/sauted, seasoned with salt, pepper and a touch of vinegar! Any green, really, is delicious like that as a side dish!

I also always massage my kale to help it be more tender. You can sprinkle a tiny bit of salt on it to get the tenderising going. I love kale.
I love kale- raw and cooked. I add a huge handful to any dinner for extra nutrition, ie, in pasta sauce, stirfry, raw salads, soups, etc..
Very fun series. Cracker Barrel has a kale slaw that is really good. I grew kale several times in my garden. It's so easy. I made a lot of kale chips. There are several recipes online. They are healthy, easy, and addictive. I would like to see what you would or could experiment with the vegetables you aren't familiar with. #1 suggestion for kale, take out the rib, chop, and massage (scrunch with your fingers) and then add it to any pasta salad recipe. it adds a ton of vitamins and minerals. tastes delicious with anything vinaigrette based. the key to eating it raw is the massage, breaking down the cell walls mechanically like that really gets rid of the bitterness and makes it tasty

Love kale in soup. Unlike spinach it doesn't become slimy.
I've done chili with rice in burritoes, scrape butter on the burritoes then crisp in the oven for 5-10mn, then turn over for 5-10mn to crisp the other side. They are delicious!
I make a frittata for breakfast occasionally. I use kale and any peppers, mushrooms or any other veggie I have left that needs to be used. Plus lots of cheese. My husband loves it.
Cracker Barrel had a kale broccoli salad that was amazing.

Alton Brown’s Christmas soup. It’s delicious and has kale, smoked sausage in it and it’s delicious! I have made it many times.
Great tip for proving with the hot water in the pan in the oven. . I often struggle with that .
