Am loving this veganized classics series. What I also appreciate is the way you break down a complex cake into stages that I can do over a couple of days. So huge thank you for all your hard work. When I take a cake somewhere and everyone is 'On this is beautiful,' I sit smugly and wait until they've finished it before telling them it's "a Gretchen's vegan cake"

I’ve taken the plunge and started making it yesterday. I made the cake and caramel and today I’ll finish the rest. Fingers crossed 🤞. I’m at a high altitude of 3500 feet so had to look up the tweaks I had to make to my oven. I had to bake at 420 degrees instead of 350. They turned out really well. Unfortunately I only had 2 square pans. I think I’ll cut one in half to make the 3 layers 🤞. Thanks for your wonderful vegan talent, we vegans salute you. 👍❤️

I use the same cake base to make a Peanut Butter Cup cake, with peanut butter buttercream. And a Milky Way cake with a “chocolate malt nougat” buttercream and drizzles of caramel. (Maca powder tastes like malt, so it can still be vegan and GF, if need be). I find this wacky cake also performs well with King Arthur Measure for Measure gluten-free flour, so you can have your vegan cake GF, too! The cake has a fudgier consistency with the GF flour, so freezing it before filling definitely makes it easier to handle.

Do you ever go to the Wild Rabbit in Ormond Beach? My friend Laura owns it, the food is awesome & she used 90% of my recipes for her desserts!

It looks like you use disposable ones, also for the pipping bags, why do you normally always use disposable instead of reusable? Hey there, I just use cardboard cake circles. Then transfer to the serving plate. I have been using disposable lately because my 15yr old Poly~Canvas ones are quite ratty by now, (however they still work!) LOL You would be surprised how many people instaed of commenting on the food~ will prefer to comment on my hands/nails/cake pans being wornout/pastry bag being discolored etc... that it gets tiresome dealing with all that negativity so I wear gloves to cover my nail bitten, cat scratched, garden soil stained fingers LOL and disposable bags to "look nicer" on video. :) I hope you make the cake, or at least some component of it!

I guess someone can see you so fantastic that forget you are also human 🤭. Nowadays more than ever appearance is a big deal, sorry for that. My husband and one of my daughters bite their nails also, everyone copes with anxiety how he/she can. In any case, thank you for your work and effort. HI Bernadeth thank you. You can use any other nut butter in place of peanut butter or BISCOFF cookie butter is a perfect sub! Otherwise just make it a salted caramel cake and add caramel to the buttercream & leave out all the peanut stuff altogether
