皮蛋麻婆豆腐
材料:
免治豬肉半磅
日本豆腐一盒
皮蛋2隻(已刮去灰)
乾蔥頭一個
薑一小舊
辣椒仔一隻
蒜蓉一茶匙
蔥粒適量
芫荽適量
處理:
1. 皮蛋,在煲內加入清水一升,大火烚熟。
2. 蔥,洗乾淨,切粒。
3. 芫荽,洗乾淨,切碎。
4. 乾蔥頭,去皮,切粒。
5. 薑,去皮,切碎。
6. 辣椒仔,切粒。
7. 豆腐,切大粒。
8. 皮蛋已烚好,去殼,一開八。
烹調:
1. 大火在鑊內燒熱油半茶匙。
2. 加入蒜蓉、薑及乾蔥頭爆香。
3. 加入豬肉,爆香至金黃色,轉最慢火。
4. 加入調味料:
a. 蠔油半湯匙
b. 老抽半茶匙
c. 黃豆醬半湯匙
d. 豆瓣醬一湯匙
e. 糖2茶匙
轉大火,炒勻,加入辣椒粒,炒勻,加入清水200毫升,加入豆腐及皮蛋,輕手攪勻,冚蓋,大火燜5分鐘。
5. 加入鎮江醋一湯匙,攪勻,以增加香味。
6. 加入適量生粉芡,燜至收汁。
7. 完成,上碟,灑上蔥粒、芫荽碎及辣椒碎。
8. 可享用。

Ingredients:
Minced pork meat 0.5 lb
Japanese tofu 1 box
Century eggs 2 Nos. (Ashes removed)
Shallots 1 No.
Ginger (small) 1 No.
Chili 1 No.
Garlic sauce 1 tsp
Green onion appropriate amount
Coriander appropriate amount
Preparation:
1. Century eggs, add in 1L of water in a pot. Boil well at high flame.
2. Green onion, rinse with tap water. Dice in cubes.
3. Coriander, rinse with tap water. Chop well.
4. Shallot, get it peeled. Dice in cubes.
5. Ginger, get it peeled. Chop well.
6. Chili, dice in cubes.
7. Tofu, dice in big cubes.
8. Century eggs have been boiled well, remove shells. Divide each into 8 shares.
Steps:
1. Heat up 0.5 tsp of oil at high flame in wok.
2. Add in garlic sauce, ginger, and shallots, fry well.
3. Add in the pork, fry well until it turns into the colour of golden yellow. Turn to the lowest flame.
4. Add seasoning:
a. Oyster sauce 0.5 tbsp
b. Dark soya sauce 0.5 tsp
c. Soybean sauce 0.5 tbsp
d. Chili bean sauce 1 tbsp
e. Sugar 2 tsp
Turn to high flame. Fry well. Add in chili cubes and fry well. Add in 200ml of water. Add in tofu and century eggs. Stir well lightly. Cover up the wok. Braise at high flame for 5 minutes.
5. Add in 1 tbsp of Zhenjiang vinegar, mix well, to enrich the flavour.
6. Add in appropriate amount of tapioca sauce. Braise until the sauce becomes thick.
7. Complete. Put on plate. Put green onion, coriander and chili cubes on top.
8. Serve.
