⬇️⬇️English recipe follows⬇️⬇️ 白切雞翼 材料: 急凍雞中翼2磅 薑一舊 蔥適量 處理: 1. 預先準備冰水。 2. 雞翼,清水解凍。 2. 雞翼解凍後,倒去水分,加入粗鹽一湯匙,乸15分鐘,去除雪味、腥味,及加入少許鹹味。 3. 雞翼已經醃了15分鐘,揸出血水,清水沖洗乾淨,擎乾水。 烹調: 1. 大火煲滾一鑊水,加入粗鹽2茶匙及紹興酒2湯匙。 2. 加入雞翼,轉最慢火,浸10分鐘。 3. 蔥,切兩端,洗乾淨,切粒,放碟上。 4. 薑,去皮,洗乾淨,切成蓉,放蔥內。 5. 在薑蔥蓉內加入鹽一茶匙半。 6. 雞翼,已浸了10分鐘,開大火至滾起,煮熟雞翼。 7. 冰水,放大碗內,加入冰粒。 8. 雞翼,已完全滾起,煮多一分鐘。 9. 雞翼,放入冰水內浸,直至冰粒溶解。 10. 預備薑蔥油,大火在鑊內燒熱油3湯匙。 11. 熱油,灒入薑蔥蓉內,撈勻,攤凍。 12. 雞翼,擎乾水,吹乾20分鐘,放大碗內。 13. 戴上透明膠手套。 14. 薑蔥油,擎乾油分,加入適量在雞翼內,撈勻,放碟上。 15. 完成,可享用。 Blanched chicken wings Ingredients: Frozen chicken wings 2 lbs Ginger 1 No. Green onion appropriate amount Preparation: 1. Boil for 10 minutes. 3. Green onion, cut both ends. Rinse with tap water. Dice in cubes. Put on a plate. 4. Ginger, get it peeled. Rinse with tap water. Get it mashed. Put in the green onion. 5. Add in 1.5 tsp of salt in the mashed green onion and ginger. 6. Chicken wings have been soaked for 10 minutes, heat up at high flame to boil them well. 7. Iced water, pour into a big bowl and add in iced cubes. 8. Chicken wings, have been totally boiled up, boil for one more minute. 9. Chicken wings, soak in the iced water until the cubes melt. 10. Prepare for the green onion and ginger oil, heat up 3 tbsp of oil at high flame in wok. 11. The hot oil, is to be poured into the green onion and ginger. Mix well. Wait for cooling down. 12. The chicken wings, get them drained. Blow dry for 20 minutes. Put in a big bowl. 13. Wear a pair of transparent gloves. 14. The green onion and ginger oil, get them drained. Add in appropriate amount into the chicken wings. Mix well. Put on a plate. 15. Complete. Serve.
