I always fry my egusi with iru and crayfish before adding the pepper and other items. I guess I will try this way to see which I like better. I think my mum makes it the way you did.
Cow leg depends, cook it separately from other meats because it takes a bit longer. I usually cut a little piece out to taste so I can know how soft it is. But don't let it cook for too long because it is still going to cook when you add it to your stew and also when you reheat it.
