Texan here! I can picture this being a very savory chili con carne. However, we like to add a little more heat. Instead of Pasata you can use a purée blend of dried peppers. Pasilla, Chile de arbol, and Guajillo. Remove the seeds, toast them a little bit, then boil them in a pot with a shallow amount of water (to preserve the juices). Do this for 15-20 minutes. Put the peppers in a blender with just enough water to maintain a thick consistency and not be watery (preferably the water they boiled in). Once you have the purée, that’s the alternative! Also three finely diced jalapeños with seeds included would be another nice addition to the vegetables.
