    I make this 4-5x every week! But I talk to myself with Chef JP accent and saying 'friends' constantly. Wife always walks in after a deep sleep saying, "Who you talkin' to? Are you talking to yourself again?" Love my Chef JP!!!

      I like Jean-Pierre exactly because he is similar to the kind man and excellent chef I learned from. Patient, knowledgeable and fun. This is what people should be watching and not the angry sect that seems so popular.

    I like to fancy myself as a solid cook who is capable of making almost anything. However, my inability to make the dreaded omelette has haunted me since my 20s. I've tried so many techniques over the years; all with varying degrees of failure. I'd get versions that were "close", but never anything worth mentioning or sharing with others.
    I made this version Sunday, and it came out perfect! It was fluffy, creamy, and looked awesome! Everyone LOVED it. I did a light saute on my onion, then added the green peppers, then warmed the ham before adding to the omelette. I also had the cheese at room temperature to help it melt faster without overcooking the egg.
    I feel I have finally defeated my old kitchen nemesis! Thank you for sharing this recipe Chef!

    Chef J P is a Master Chef. Adding butter cubes to the egg! The thorough mixing of the melting butter with the slowly cooking egg! The perfect texture at the end! Such a humble dish. But a work of art from Chef J P!

    Never have I ever seen an omelette made this way. Now I know why I gave up trying to make it!!! I was taught wrong! This looks easier than what I was shown! Didn't know about butter and bubbly water in the omelette either!!!

      Agree with Michael! But, c'mon, the chef does not mention the need for garlic in this recipe! IMO, eggs, plus salt, plus butter, plus garlic makes for the yummy experience, no matter whether the recipe be for an omelette, or a simple scramble. I also like to add a pinch of red pepper flakes and several tablespoonfuls of fresh chopped green onions (the white parts, saving the green parts for garnish). This recipe is not nearly as good as it could be, Chef!

      This is called french omelette it is so hard to do but after a few tries I think I got it. Rule number 1 it can’t be brown it has to remain pale. Rule 2 it has a different texture inside and the rolling is the hardest. This is one of the culinary test u do.

    When I was breakfast cook at a restaurant 100 years ago I always put a bit of the omelet filling on top to help the waitress identify the filling. 3-4 omelets going to the same table and they all looked alike could cause an easy mix-up. With a little parsley also on top they looked "pretty.'

    EVERYONE makes mistakes in the kitchen, even TV chefs! And just as almost EVERY chef channel will edit those mistakes out, or cut the video, YOU Jean-Pierre lets them in and keeps going!     I love a good "Farmers Omelette". It's basically one meat, and all the available veggies. Mushrooms are absolutely a must for me.

    I just made an omelette for me and my wife! I love omelettes in the morning. Used corn and peas (sauteed in butter) and dried tomatoes, I thought it might not work but it did.

    Anyone that hasn't tried this yet, trust me it's the best omelette you will ever make. It takes a little bit of practice, but it's not difficult, and it's definitely a bit trickier making a smaller portion for one person. But I couldn't believe the difference from how I've always cooked omelette, this was so much better. I make this at least once a week, and like all the meals from this wonderful chef, the family love it too.

    i've always had a difficult time "Rolling" the omelette so I resorted to Fritatta style or major scramble. I am confident I can master your way of rolling the egg into the omlette. Thank you very much chef.

    Your enthusiasm made me jump up and try this myself. Wish I could post the picture of my result..it came out perfectly and the technique for rolling-out the omelet was key to perfect plating. I skipped breakfast and lunch..so I wish I could say this was for 2-3 people...but alas it was only for me. Gone in a gobble. Loved it.

    It IS beautiful!!! I have never cared for omelettes due to the fact of how they are commonly cooked which ends up being overcooked on the downside...this method makes for a GREAT omelette style and I will definitely try this.....genius method to slightly scramble first...never even crossed my mind!

    Tried your recipe this morning. Came out excellent tasting; however, mine didn't look anywhere as good as yours. A little more challenging than I initially thought it would be but was fun trying.       Check your heat! Lower temperature at the start. When the butter in the pan starts foaming, add the eggs.

    I love to see all the different ways that people do eggs. When I was learning to cook, this was the first thing I was taught to make. I learned how to "French" eggs to make so many different things.
    May I make a suggestion for the channel. Maybe teach a cooking term in the video, you told us about the term for prepping to cook. Are there other terms that we could learn to make us feel more like a Chef?

    Oh, Chef, I had spent 100 eggs on cooking the perfect omelet so far. Great recipe. I found that without adding cold milk it’s hard to cook an ideal omelet. Also, I’d like to add chicken bouillon instead of salt. I think it tastes better.

      Well just egg and butter for me. A lot of butter and not too cooked but well this is cooking, everyone is entitled to make the dish to his or her own taste 😉😇😁

      I also always add cold milk but I just made this with ham and mushroom and the egg was very light which I assume was the bubbles. Very tasty and I will be making again

    Now I know how to make the perfect omelette!!! I can't tolerate eggs that are slightly runny and don't like 'browned omelettes' - but now I have the tools to do it the right way. No one else has ever given this advice--and I've watch many chefts serve up what I would consider raw eggs. Thank you again and can't wait to make and eat this up. YUM!!!

    I've been cooking chopped mushroom and thyme in a pan of olive oil and butter together - then adding my egg. Wow amazing!

    Hi Chef. You want to know the epidemy of good food? You made a video on 24Feb22 (How to Make an Amazing Pot Roast). Last night I made it for my wife and I, (OMFG!) by the way! So, I get home from work, heat up a bowl, sit down and watched this video. I was drooling out of the left side with my Pot Roast; and out of the right side with the Omelet. Thank God for napkins. Well done, Chef. You always have something new to teach with even the most basic dishes. Thank you, sir.

    All those years I thought I am making fairly a good Omelette one of my favorite food but watching you thought me a whole new way to make it, e.g., butting cubes of butter in the eggs before cooking it. Marvelous 👍

    I found this channel last November and I am so glad I did! I did the upgraded chicken and beef broths and used it for my gravy, using JP'S recipe. My family loved it. I have made quite a few recipes and they turn out delicious every time. If I forget something I don't stress out just add it when I can. Thank you JP for being imperfect and just going with the flow.
