    In Vietnam we called them "nail clam" because their shells look like a fingernail. It's true these clam are delicacy in here but the price is not really expensive like you've said, only about 5 to 6 pounds per kilogram and can be cheaper depends on the season. The best way (in our country) to cook these clam is to grilled them up and served each clam with a teaspoon of lightly pan-fried scallions leaves (half raw) with cooking oil for scent and peanuts. Trust me, the sweet taste of clam meats with the scent of scallions and the taste of peanuts will go great with each other, especially with an iced cold beer pitch (Vietnam ways :D)!

      Scott, that was a microscopic piece of the foot you cut off to eat. In Vietnam, do they eat the whole thing, or just the foot? Why can't you cut off more of it? And for that matter, why not eat the whole thing?
      I DID really enjoy your vid, btw...

      Well in Vietnam we eat the whole thing actually! Or course for sanitary reason, we usually open the clam and clean it thoroughly with salt water and removed the intestine sack just to be sure (their intestine sacks contain loads of germs and parasites!) but keep everything else intact or boiled the whole batch till their mouth open and grilled them. It is quite a cultural thing as we won't waste any part of the food and throw them away.

    As Chinese, we prefer steaming seafood with just a little of seasoning. In this case for razor clam, I use a knife to carefully separate the muscle which is stick at its shell from both side. Then I cut the 'tube' part to clear out all the sand and this is pretty much all I need to do before rinse it off. Finally, just put them on a plate and steam for around 6 minute when the water is boiling. If you prefer though, adding some sea salt, chopped herb and garlic before steaming is an option. Don't forget about the 'juice' on the plate! Mix them with cooked pasta is always a good choice! :D

      +Mangere4life Some people like to toss away the digestive tract (similar to the veins in prawns) but you should be able to eat everything in there no problem. Just make sure to cook it.

      In stores I see them, they removed everything inside and shells except the flesh. My mom made a homemade soup of it, so freaking good 😋

    These critters a wide spread a shore lines up and down the East Coast of the US. NO one eats them probably because no one know how to cook them. Another "lost delicacy" recovered for me by Scott Rea

      plenty of people eat them especially in ma, that's what they make "clam strips" out of commercially. whole bellied clams are the favorite (and the tastier option), but then youre getting fried clams or chowdah.
      also an invasive species in europe from the eastern us shores.

    Nice one Scott. Just eating ..... A plate of razors (or spoots..) I like mine with strips of parma ham, a few cut olives and lemon juice but i always keep the cooking liqueur. If you use just the top of it (not the gritty residue at the bottom) and reduce it down then whisk in a little extra virgin oo its amazing. Definitely gonna try 'em with chorizo now too.Like your vids bud. Andy

    They are a filter feeder so there is a chance of getting sick from eating them. If you purge them for a day at least in clean salt water that reduces the risk.

    They're quite common seafood in Italy. Pasta made with it is awesome.
    They're also quite easy and very fun to catch also in deep water (you need a long metal stick). I used to do it all the time until they passed a ban on private fishing where I did it.

    Very good, Scott. Here in Brazil (Bahia) do not waste water from cooking seafood (it's really tasty) and other parts of the animal. Normally, we do a kind of soup with water, with pepper and lemon, which is amazing. The whole animal is edible, but not the shell. I'm saying this, but I have never experienced razor. Thanks for sharing !! = D

    The clam is used to a certain ambient salinity.The second the extra salt hits it's body parts,it tries to get away from the salinity lever that will kill it.Hence,it shoots out of it's tunnel/hole trying to escape to a less salty area.
    These clams exist pretty much all over the world,since they were here before the dinosaurs. They only live in TEMPERATE zones though. No razor clams in S.Florida but,a few up in the panhandle.Northeastern beaches,from Virginia on up to Maine,are a better bet.Still.They are not on every beach.

I also saw a video showing people catching and eating sand fleas..but I'm not sure if we have those either and can't get an answer from anyone. Suck that we have all these beaches but can't find these things!

    Looks tasty, I never though to try chorizo with clams! I have been catching and eating these my whole life. In my opinion, it pays off to gut them before cooking, they taste better and less bitter than boiling them whole. This way, you can also add them straight into clam chowder or other dishes towards the end and they won't get overly chewy!

    We eat the whole thing in New England.
    Clean them in water and corn meal to purge the sand and steam them and dip in melted butter and the broth.

    Wind can be helped. For a camera, get a sock. Cut out a hole for the lens and camera back. If it's a phone, use a nylon with bits of sock or foam over the microphone.

    I like to eat the foot of the clams with various sauces, the possibilities are endless and I like to pickle the mantle for salads, that way nothing goes to waste.

    That looks really great and made me feel pretty hungry! You could even use all of those same ingredients and simmer them in some olive oil with minced garlic and some white wine combined as a white sauce and serve that clam and chopped chorizo mixture over a bed of pasta (linguine or spaghetti) to make a full meal. Just add some Italian or French Bread and a side salad with some white wine!

    Lovely video, thanks for sharing. How come you only eat part of them ? I've never tried razor clams, but have tried and enjoyed many other shellfish. Seems a waste to throw the biggest part away. Not criticising, just curious.

      Andrew Wheeler I too have no idea why he does that. It's a real waste of good food. And to me even showing disrespect to the animal itself. The only part that I would tend to stay away from is the black part (poop sack), but other than that: I'll eat the whole darn thing. LOL

    there're other recipes to cook it, where instead of using chorizo which has a very distinct flavour on its own, spices are used to enhance the clam's natural flavour.

    Done a lot of fishing in north wales near holyhead and caught a lot of them, theres a huge mussell bed too in the water of the inland sea at Four mile bridge where I would sit there in the boat cleaning them and ate them all that night lol. Water is so shallow that you can step out of the boat where the mussel bed is

      that's what i thought also, i come from the east coast of nova scotia and the razor clams we got there were 3 times that size and there wasn't that much wasted, we went waist deep in the nice cold water to get ours, you just look down in the water and see them sticking up all over the place

    Thanks for sharing how to catch them. It is so, so expensive in Malaysia. When we see 10 Euro per bundle , around 1 kg, we always buy it and fry with Fermented Bean Paste -- Taucu, chopped with garlic, ginger and chilli. Fry the chopped ingredient until aroma, add in some white part of the green onion , add in the soaked and washed Razor Clams, add in some hot water and once it opens up, add in the green part of the green onion , stir well and dish up. If cooked too long, the meat will like rubber. Scott Rea cut off so much of the clam away, it is really wasting the yummy clams!

      +Rockets Redglare PMSL its the sort of food my mum would have forced me to eat saying it "will make your hair curl" I had to eat everything she served up if not it got saved for the next meal and the next meal until I complied,, brussel sprouts being the one I hated as a kid but actually like now and guess what? My hairs still as straight as it was when I was a kid! Not knocking it, I may well eat one to see if I like it as I love oysters and scallops but it seemed a lot of effort for a small reward if two thirds of it gets thrown away? Its why I like Scott he educates and its up to us if we want to take a bite (or not) I guess?

      Don B Oh yes, I have childhood food trauma too. Mine was more" eat it, or go hungry". My great grandma came from "the old country" and cooked some of the smelliest things ever. Brussel sprouts are good. You just have to put lots of pepper on them and braise them in olive oil with some garlic, and some butter, then hold your nose while you choke them down. Yum yum.

      TheTraveler You don't starve mussels for a few days either, do you? ;) You rinse them, let them sit a bit in cold water, rinse them again, and that's it. Most of the sand is gone by then, just like with mussels. And the nasty surprises: I'm guessing you're talking about their poop, right? Well, unlike mussels, I wouldn't recommend you eat the black part if you look at it as something nasty (the poop). It's not a big deal, but I understand that it might make some people throw up. :p

      If it's anything like purging crayfish salt water makes them vomit and poo, if you don't purge them they have the poo veins, you do it about a day before, then in the hot tub, I know it may seem cruel, but you gotta get the yuck part out before you eat them, honestly I can't cook lobsters, they scream when you toss them in the hot water.

      +TheOpelkoenjas Are you sure? They don't have a thorax? That high pitched noise sounds like a scream, and it's right when you toss them in. I watched an episode of master chef where they gave all the chefs a huge live crab, it blew bubbles so I know it was alive. One of the chefs grabbed the large crab and ripped the top of its shell off, I mean completely off, Gordon Ramsey went over to her and told her that not only was she letting out all the flavor that way, it was inhumane what she did to it. There is a grocery store down here I heard that when you buy a fish from the tank they take it to the back and wack it in the head before they give it to you. I couldn't do that job either.

      Notice the Snail like skin, salt in the ocean is diluted enough to have no affect. Pour regular salt over and that clams head'll shrivel up, it starts to feel the burn and pops up in an attempt to find water put its top in. (This is all based off nothing, but what i saw.. So take it as a grain of salt;) i guess)

      Because to much salt could raise the clams blood pressure and most clams are very health conscious. No one wants a hysterical clam with high blood pressure now do we??

    razor clam in Alaska are much much larger. Also you can eat much more of the clam. Smoked razor clams are a bit chewy but mind blowing flavor.

    ..... That would go well on a bed of veggie rice..
    ..... I dry my own veggies and throw a handful or two of them into each serving of Ramens rice or whatever lacks veggies.. It's a quick, painless way to get more nutrition.. I also forage for nutrient rich foods.. I even dry and freeze foraged foods for winter use..

    Good video for all the ppl who've never had them there deff missing out because they are delish but you should have saved the boiling liquor and used it for something else,I don't like to waste anything from seafood :-) my fav food and so healthy for you. 100%protein 0%fat.enjoy.

    You get top dollar for these in Spain. Most people supplement their income by catching them and flogging them to restaurants. Another thing we don't eat in UK (and we have an abundance of them) is gooseneck barnacles (percebes in Spanish.) Sell in Spain for 50euro a kilo. We don't look twice at them here. Same as octopus, a delicacy on the continent, in UK we use it for crab pot bait!!!

    There is another video in a non-English speaking country, where they spot the holes but the creatures are called "ghost prawns". The method is a pvc pipe ?pump assembly that causes a vacuum effect. The prawns (maybe shrimps, but they are big) are sucked up after several pumps and exposed on the surface of the sand.

    I never saw a "razor clam" that looked like a long tube before! But I suppose there are many species. It doesn't say but I'm guessing by his accent, that this was somewhere in the British Isles. I got razor clams off the beach in Washington State but they looked much different from that!

    Scott if you have a chance, try eating them at a Chinese Restaurant. I'll guarantee that you will L.O.V.E it. Make sure "Steamed" version with garlic!!
