      You should account for the fact that Lard is pure fat, and butter is 80%fat, 20% liquid. It would be better to clarify the butter first. It is easy to render your own lard, you should try it and use it. It is a traditional ingredient and has many culinary advantages.

    Saying it's not hard is not very honest. It takes quite some time to cook up a batch and will be gone in a blink of the eye.

      This is longest, most drawn out way I've ever seen cannoli made. I make it using a food processor and use a rolling pin. Never had to leave the dough sit.

    I replayed it several times but could not make out what was used as the first cylinders " thus the name cannoli" any help?

      sugar cane stalk is what was used, he seems to say some type of cane in the video

      He said "river cane" - but sugar cane was grown in the flat coastal regions of Sicily back in the day, so he probably meant sugar canes.

    I followed the recipe step by step, I even fried them in lard but i did not achieved the bubbles in the tubes. I have also put vinegar and marsala. Any advice?

      I've heard if you roll them too thin they won't bubble.

      Use a rolling pin. They don't have to be thin. Make sure oil is hot.

    Looks like it would be tasty, but too many tools are needed, I have none of those, and will be looking for a more simple recipe to make at home.
