- Cannoli are famous Sicilian fried pastries and 93 year old Clara has been making them the same old fashioned way for over 70 years. Join her in her summer kitchen to find out what makes the special.
For the pastry, Clara uses:
1 kilo 00 (all purpose) flour
200ml water
200g lard
50g sugar
2 tablespoons white wine vinegar (nothing too strongly flavoured)
For the filling 500g ricotta, 100g sugar (or to taste), 150g chocolate buttons
A large quantity of lard for frying - this is an excellent fat for frying, but you may prefer to use rice bran oil which is widely available these days.
Clara got this recipe 70 years ago, from a woman who was 90 at the time. This recipe is a living connection to 1860. Thank you so much Clara and Pasta Grannies for preserving these connections.
hi Ben, I hadn't done the maths - thank you! It's amazing isn't it. 😊🌺 best wishes, Vicky
Italy became a united nation the following year.
trippy! love this video, she seems wonderful !
Amazing, i hope someone close to her can keep her wonderful recipe going, & she makes it look easy but its really not lol..
Yeah or the recipe could have been given to the 19 year old from someone else
The fact that she can still walk at the age of 93, makes her own food, doesn't waste any leftovers, and still got some secret tricks up her sleeve. I honestly applaud that. 👌
Absolutely
Seriously. Most would probably sit in front of a window all day at that age unable to move.
Funnily enough my grandma who is also Italian and in her 90s is still running around making the best food. Hardy people those Italians.
It's the diet (genes help too) but it's mostly the diet.

This is a masterpiece. She's living the life...bless her. Anyone who gets to try one of her cannoli should be grateful
Hahaha the shrek glass time stamp makes this comment somehow so wholesome XD
This detail made my day!
Hi 😅 you must be a crazy foodie just like me. I encounter your comments in all possible food channels 😊
I was just about to mention the shrek glass! Had those same glasses as a kid. Got them from a McDonald's promotion for shrek forever after. Fun fact: they recalled all of those glasses for containing a dangerous level of cadmium in the paint. Love that granny though.
LOL, I had to look.... 😂
Awww the way your camera guy made sure to get her eye contact before he told her that they were beautiful/delicious..... He is a kind soul. ❤️
Yes, Andrea is great with all our signore; Clara is very deaf, so it was important to get her attention. best wishes, Vicky
And quite easy on the eyes I would say😉

Agreed
If Clara likes chocolate buttons in her cannolis, I like chocolate buttons in my cannolis
@Laila Julfar I wouldn't argue with any Sicilian granny. They not only cook like pros, they know how to shoot as well!
@Laila Julfar Actually, in Sicilia there's one different version of cannoli for each grandmother :-D Mine liked her cannoli with no chocolate, ricotta was forced through a silk cloth for smoothness and cinnamon powder was lightly applied on top of it. Gosh, I miss them!
Then you should get chocolate buttons in your cannolis.
😂 same.
👍👍 Right !! Personally, I do not know if I could tolerate it fried, maybe if they were baked in an oven ..at any rate, they look delish !!
Wonderful, what are the chances of me meeting an italian lady with 93 years old and watching her cook on a small island next to Sicily? Never. so I love this channel, it's exciting. My mother is 81 years old, is a granddaughter of Italian and has the same cheerful spirit, makes pasta for the whole family and keeps everyone together with her spirit. I love Italy and Italians. silvio, 57 years old, brazilian.

I like how the narrator uses measurements while the grandma doesn't. She just puts in whatever she feels like
Reminds me of the Malaysian aunt Gordon met who kept telling him "agak-agak" in regards to him asking about the measurements for rendang
The Czech version of that "přiměřeně", which is "adequately" or "in proportion". :-)
I'm amazed by the self sufficiency of Clara! Cuts the bamboo every February and knows how to clear the interior...All for her specialty dessert! Wow!
I imagine she makes her own lard for the pastry & frying, as well!?
I laughed at the (large) number of cannoli shells laid out to fry - "for her family and friends" - for an Italian family & friends ALWAYS a big number. LOL!
I also LOVE the use of 'summer kitchens'. Here, in the U.S.'s hotter climes, a summer cooking space would be so nice!
I remember my German Granny used to save bacon grease from breakfast in a folgers coffee can on the stove. She saved up all year for Thanksgiving and Christmas holiday baking. Nothing beats her pie crusts made with these pan drippings!!

Clara is the spitting image of my dear Scottish grandma. It fills my heart to watch these videos because they're a link to simple no-nonsense lifestyles, and these ladies (bar a handful) don't need designer kitchens to make fantastic meals. As for this recipe, it probably goes back even further than the friend who passed it onto Clara! Much respect to you all xxx

I'm italian and I'm 24, but I gotta say one important truth to y'all, these old and precious people are the REAL italians. The italians who are genuine and hard workers, who do everything with passion, sweat and smile, who truly believe in family and union, who represent the old values and virtues that most people now have lost. They are the last italians, and I'm lucky to live on their teachings.

Clara's recipe is genius and more than 100 years old. I haven't seen one like it and these are the tips this pro shared that revealed how to make her traditional cannoli that are outstanding:
1. Clara uses a large cutter for her cannoli. Most recipes use very small cutters and make cannolis less than 2 inches long or so.
2. After Clara lays the bamboo form on the dough, she dabs water just to the center of the dough where it will join together. The only part of the dough she connects is the very center. Because she uses a large cutter the bulk of the cannoli flares out on either side. That allows her to fill the cannoli with a knife, so there is no need for a pastry tube to fill the cannoli.
Most recipes seal the cannoli dough all the way down the tube.
3. Clara's recipe uses only a few ingredients in both the shells and the filling. This lets the flavor of the high quality ingredients shine. She uses a natural lard, natural vinegar, a little sugar, and flour in the dough.
Most recipes also add one or more of egg/yolk, marsala, cocoa powder, cinnamon to the shells.
4. Her filling is just whole milk ricotta and a bit of granulated sugar. Most recipes add vanilla, glaceed fruit, and have instructions to drain the ricotta over night in a sieve in the refrigerator. Or they say to squeeze out the ricotta in a cheese cloth to remove liquid. Removing liquid from the ricotta in most recipes is to help keep the cannoli shell crisp.
Clara avoids all the complicated steps by mixing a litte plain granulated sugar into the ricotta and pressing it through a sieve.
Ricotta is a lot like cottage cheese, in that it's milk curds (straight protein), in some cream or milk. By pressing the ricotta through the sieve, she is breaking up the curds (protein), which are much drier. This process gives the curds a larger surface area which increases their ratio to the liquid, (cream or milk) in the ricotta, effectively creating a drier filling.
As Ben Richey commented beautifully, I quote, 'Clara got this recipe 70 years ago from a woman who was 90 at the time. This recipe is a living connection to 1860. Thank you so much Clara and Pasta Grannies for preserving these connections!' I wholeheartedly concur. I am thrilled to have this recipe.
I had to sift thru a hundred or so comments to find yours - which is about the recipe itself. Thank you. Did you actually make it? I tried another recipe from Italia Squisita that was terrible. They were not clear or incorrect about ingredients, weight, or the process but the end result was a terrible cannolo shell.
I followed the recipe and I don't think that the woman narrating gave proper measurements. Obviously the wonderful woman cooking is a master cannoli maker. But I followed the shell recipe to the t only to have the shell fall apart in the oil and turn to dust.
