Made cannoli shells with this recipe yesterday - the best recipe I have tried to date. Next time I would reduce or eliminate the cocoa powder - my shells were on the dark side - but still the best texture. I also exchanged the marsala wine with whiskey - excellent flavor.

If you wanna make it a little bit easier on yourself you’d wanna push the tin out carefully as soon as the shells come out of the oven so that when they stop expanding they don’t squeeze on to the tin. It just takes a lot more care to do it but it really works out in the long run
If I may (I’m a baker of Italian desserts), I’d like to share that for the Ricotta, there’s a Baking Ricotta called Impastata. That works excellently for the Cannoli filling. You won’t be disappointed, trust me! 😊
