    I live in northern Italy and my parents are from Sicily and moved here when young. Usually cannoli in Palermo are filled with sheep ricotta cream (ricotta - sheep ricotta is fatter than cow's, you need to make it drip all the liquid - sugar and vanilla and you can add chocolate chips and cubed candied orange peel ) and are much bigger than those you made and decorated with candied orange peel on one side and a half candied cherry on the other. Because we wanted to fly back home north with a tray of cannoli to be eaten over several day, my aunt asked the pastry chef to line the inside with melted dark chocolate to avoid sogginess.

      Mine are from all over Napoli Calabria venitzia and one is sure they're from Sicily but they're not so we have 4 shops to get them-So I had such fun watching my fav Aussie Go a few place near where we went 48yrs ago😢

    Tim Tam was copied from the UK Penguin biscuit. The guy who invented Tim Tam copied the idea etc and said he wanted to make better than the penguin.

    It's really hard to find a good cannoli where I live. They ruin the shells with cinnamon more often than not, and I can almost NEVER find pistachios. It's only ever chocolate chips, and they mix them in with the filling more often than not. =/ So I can't ever really get cannoli because we have chocolate allergies in our family!

      @@HowToCookThat i used to, when i studied German at school, but now but now i dont. I decided to learn Italian because it seems fun and my Science teacher is Italian. I'm currently using an app caller Duolingo #notsponseredbutcouldbe and it's pretty good!

    in Puglia those little biscuits with melted nutella on top are called 'lapilli', so the little pieces of debris that fall out of an erupting volcano and they are DELICIOUS

    I'm so sorry we (the dutch) claim wifi. Vic a dutch engineer, he is the man most often credited with the invention of wifi.
    Popularly known as the “Father of Wi-Fi,” Vic Hayes is senior research fellow at Delft University of Technology in Delft, Netherlands.     I think...no, I KNOW...that Australia was the first to make Lamingtons and Pavlova (we made Pavlova in March, delicious) and I made Lamingtons using your spongecake recipe for my mom´s birthday--also delicious. And even if New Zealand doesn't agree about the desserts, obviously Australia is home to the best pop band ever, the Seekers, and also the best cook ever, Ann Reardon. Ooh! And Australia is home to the inventor of sugar bowls and numerous other tasty desserts and Woodley the stuffed koala.

    There's a classic Italian-American dessert (at least within the Boston area at all the old Italian-American bakeries). It's made exactly like sfogliatella except right before the end stage of closing the pastry, you pipe a large amount of choux pastry in the middle. As it bakes, the choux expands and creates a huge inner channel and spreads clusters of the layers into a large pastry husk that resembles a LOBSTER TAIL (hence it's name, Lobster Tail). Then, it is piped with a pastry cream/whipped cream/ricotta cheese filling that's oh so yummy.
    If you're up for a challenge, you should try making sfogliatella and then the much more fabulous Lobster Tail!

    SORRY! But even with Tim tams they're based off of a biscuit here in England called penguins which were made first... so yes and no to them being an invention? It's kinda just like a tweaked version of a penguin ;u;

    Another great video. I wonder who is behind the camera. They along with the editor(s)-Ann-are doing a great job. Didn’t realize you were all the way up in Europe. Found out I’m not a cannoli person in Taormina but had the best cassata ice cream in there. I’d love to try them both again. Didn’t know about lawnmowers and wifi being Ozzie inventions.

    I'm from Sicily. Cannoli are not originally from Taormina. That's what they tell to tourists because Taormina is the most touristic (and expensive) place in Sicily. The original filling is the one with the ricotta cheese, all the other fillings are variations. Other than that the ones you prepared look good and yummy :)

    I'm in the Rocky Mountains. Tim Tams are a very expensive import here, but totally worth it to get at least once. They're fantastic.

    I love TimTams! I love in the USA and a friend had some at as speech meet because she was giving a speech on Australia. They were really good and I can't find them anywhere!

    The "little biscuits" at the end looked better than the cannoli to me!
    They reminded me of the pie crust cookies mom makes. Though usually there aren't enough off-cuts to make us happy, so mom just uses a whole batch of pie crust for cookies. Just roll the dough out thin, put it on a cookie sheet, coat it in butter and cinnamon and sugar, cut into squares, then bake.

    Im from America but i got an aurtralian snack box and it had Tim tams and they are amazing!! There was also these small wrapped carmel choclate things that were really good but i forget what they were called

    you know... Tiramisu by example isnt even proven to be italian at all. its most likely an invention of a french cook that made it to honor the russian tzar by mixing an english charlotte cake up with mascarpone.
    as long as current bakery is good in australia, they still can be famous for doing it right and dont need any inventions. a lot of famous dishes are either just a variant of something or have an unknown origin. you represent your country very well in this regard.

    Fill your cannolis with chocolate to coat the inside and they will last longer - make sure you temper your chocolate or use fake chocolate but I prefer tempered real chocolate. It’s too soggy if it’s not tempered. If it is it gives a nice crisp bite to the cannoli

    I learned about the tim tam slam from my Tasmanian friends 20 years ago. To this day I will grab some from Target and use it with my coffee.
