I have cooked on all of that same exact equipment that Gordon gave the kitchen. He's not lying. That Vulcan range cost us $19,000.00 because it is the best. The Blodgett convection oven cost us over $25,000.00 because it's the best. We served 300 people a day for 11 years on that same range. Adjusted for inflation, the kitchen he gave them would cost $90,000 to $105,000. We put that range through hell and back but it just kept going. We had it serviced every 6 months, and that fucking thing never let us down. That oven cut our cooking time in half. I could roast potatoes in 15 minutes, baked potatoes in 35 minutes, full prime rib boneless in half the time. When you cook food so quickly in the oven, it loses much less moisture, preventing dried out meats, and caramelizes in ways that no other oven does. This is why I love Gordon. No bullshit from this man, and that's a rare quality for celebrities.

But, I will not do that to my customer and giving them shit food because I care, I take pride and I have conscience. I can't sleep at night.

I often cook more than I can eat and share the excess with my workplace and there is no way in hell I would feed anyone anything unsanitary. They could sue for getting sick off of that food and where the fuck are the health inspectors??? When I worked at Pizza hut and Burger king we was getting infractions for the smallest things and this would far exceed what we would be able to get by with. This is atrocious.

But then another article pointed out that according to other successful restaurateurs, despite the conditions at the time (recession), it was practically a miracle that a number of those restaurants survived and even found success. And it's more due to business acumen than anything else.
