I will soak the Salt fish tonight and get all of the other ingredients and cut some fresh thyme tomorrow and put it together. I am looking forward to frying up some Accra tomorrow.

Let it rest for 15 minutes.
Does anyone know whether it’s plain flour or self raising
I used regular all purpose flour
you did not add thyme, I think you should let them fry a little longer so they get a nicer color

I had a feeling it was trini ;-) but is it possible to make them without oil?
I will have to say no 36Atoli. As much as I enjoy saltfish accra and pholourie, I hardly ever make them because of the amount of oil that is required to fry them and you would need enough oil in your pot for them to get the ball shape. Yes you can use your hands as long as you feel comfortable doing it!
I usually add some sour milk or yogurt it brings out a nice flavour, if creative sprinkle some parmasan cheese begore frying.
Thanks for sharing that tip! Typically in the caribbean we don't add sour milk and yogurt to this dish but I will difinately give it a try!
