Jack I did this job and loved it and I made the mistake to go into food sales in the foodservice industry, but if I had it to do over again I would have gone to culinary school and kept cooking. If this is your passion stick with it. Love the videos they really take me back.

This is not the fancy cooking you see on TV but the volume kitchens that exist in most high volume restaurants. These guys work their asses off.
Go watch the episode where Anthony Bordain went back to his old place and worked the line again for a night. Not work for old guys.
Granted ive never gotten THAT many tickets in a rush, but i found it helps to fold the tickets in half to help prevent them from rolling like that.

this is the kind of kitchen i like. I work in a corporate restaurant and dam so much rules and not much cooking going on. We use rational as a way to cook food. Rationals are good for bulk cooking but not the means to replace stove

Ugh this gives me flashbacks of doing 200-300 covers in a few hours. Nonstop boogie. Your whole body starts to buzz after a while. Just slanging food in controlled chaos. I would have to spray my shoes off in the dish pit after the shift was over

@@Rctdcttecededtef some people just realize they don't want to dedicate their life to this craft and that's fine. I did very well in some of the nicer kitchens I worked in but wasn't willing to make it my whole life because I had a lot of different hobbies I really wanted to pursue (BJJ & MMA comps, ultra marathons, etc) so I changed jobs. Sometimes I wonder where I'd be if I had committed 100% to the craft but Im incredibly happy at where I'm at.

Whether you’ve been doing it for twenty years or two months you should always wear a chain mail cut glove when slicing and dicing. Two seconds to put it versus months in a hospital, you do the math. Accidents, especially In a kitchen with knives, happen EVERY day to the best of chefs.
Yes gloves are a must in the 21st Century...customers appreciate this and expect this...gloves are 10 cents a pair...and never cook in a T- shirt. even if you are not visible to the customer...your food will be prepared better by you and staff will interact with you on a higher level...I guarantee it! Chef coat(choose your color and your style) with your name on it $45 and worth it.😊 no gloves and t shirts are an easy out ...rise above and everything will follow😉
