      @@wibbels4626 Pro tip if you've got a Mac: there's a setting in the Accessibility preferences panel to mix both channels together. The name seems to change from version to version; on Big Sur it's called "Play stereo audio as mono". Problem solved.

      Honestly, my only difficulty in fillo is the fact that you need to roll it until it is very thin. But even then, I think I did a pretty good job when I first made tyropita and spanakopita. Now for sweeter delicacies that's a different issue😅.

      There is that Perfect episode of Courage the Cowardly Dog where Muriel (and Courage) try to make baklava, only the dough is lighter than air (before vanishing into), and the syrup is blowable like bubble gum.

    Definitely not the same as the baklava I grew up with, but there's many ways to make baklava. I think everyone loves the baklava they grew up with, for me thats a more crispy diamond-shaped baklava with walnuts and a lightly sweet syrup (sherbet).
    Our syrup never used honey, just sugar, water, butter and lemon is very important. You want the syrup to have a more light sweetness, not like caramel or honey, it was never overpowering in sweetness, just the right amount of sweetness, a thin handmade dough, cooked to be slightly crisped but not too hard and nutty.

      That's really cool Jul, I like the variations people bring on these comment threads :) I had baklava at a Lebanese restaurant and there was definitely some honey in the syrupy pastry, but weirdly a pinch of cinnamon came through aswell. I love cinnamon and honey combined so I had no complaints! :)

      Oh that is a different recipe from the baklava I know and love. But I will try yours too, it sounds delicious! 😋
      The recipe I grew up with is the syrup we use water, honey, sugar, orange or lemon zest (I much prefer orange), cinnamon stick and some cloves. Very rarely do we ever add this one ingredient of star Anise, only around the holidays we do that because it really dose bring some cheer into the syrup and make it taste more intensely like cinnamon and our family personally loves it.. Otherwise we do not use it because not everyone likes that. The result of this syrup is a thick, caramel honey taste that has a tangy taste of the orange to add to the sweetness or the tangy citrus of lemon to cut through the sweetness just right. It balances out better with the lemon but my family is a bunch of sweet tooths. Ahah 😆
      My hometown is Pylos, everyone there makes the syrup like this. I feel you might be from the more North area of the Mediterranean, the dishes there are so similar but slightly different in a tasty way unknown to us. Hopefully I can recreate your recipe well and I'll get back to you when I have! 😊 😋 ❤

      @@xggx343 you ever tried it? It’s not overwhelming at all, if you knew how saffron tasted it’s an underlying note of flavor. Saffron and rose water is used in Persian baklava, I mean idk why you’d think it’d be disgusting

      @Jace Smith I am Greek and i can safely say that baklavas does not originate from Greece its' origins come from ottoman empire and it then became well known in the cousins of middle east, central Asia, Balkans (Greece is part of the Balkans) and some other parts let me know if I am wrong though
      Edit: though might I add that each place prepares baklava differently so you can say that each place has its' own baklava I guess.

      It makes sense too because, and fun fact incoming, allot of Byzantium Empire food comes from the Arabic Empire. I'm not sure how but the influence can be seen if you look closely at the two cultures.
      Also, I feel Arab is the origin of all the foods that both Turkey and Greece share. But ever since Arab culture has died down, the food that got carried to other cultures are being split in credit and in names. Its confusing to keep track lol each culture calls the same food a different name now. 😆

    Hey Babish,
    There is a tiny tiny flaw in your baklava. I am from Turkey, where baklava originates from(probably) and I can say that your baklava is more about the fillings. Traditional baklava is more about the pastry and the syrup. Traditionally speaking baklava has a chunky one layer filling. It has a thinner bottom layer which sucks the syrup a lot and gets soggy, and the bottom thick and puffed up one is more crunchy. Looks delicious and I love you man!!!

    I am from turkey and my grandma makes baklava every year for holidays. Something is off about this baklava. There should be more layers, a little bit bigger and chunkier pistachio, the syrup must be boiling when you pour it on the baklava so it looks like the dough is dancing at first because of the boiling syrup. It should not be dry, but soaked in syrup. You roll out dough yourself, it should be really thin because there will be a lot of layers and it will swell with syrup.
    Also it is made in round, big, metal trays because it is meant to be served to guests, relatives and other family members during those holidays and special days.

    I grew up in Turkey, and even though I have a bad rep among my friends for not being the biggest fan of the local cuisine, Baklava is one of my favorite desserts ever.     Just made this a week ago and this recipe is delicious! Both the chocolate and traditional versions are really good, which was a little surprising since I was concerned about the lemon syrup clashing with the chocolate (but it went great!). I didn't have any hazelnuts, so I substituted pecans instead, and it came out great to; kind of like a reconstructed chocolate pecan pie. Took me about 6 hours to make total, though if you have the time I would totally recommend making it! Great job once again, Babish!

    As a turkish person, I know there are a lot of others, all I can say is that while this sort of syrupy baklava is commonly known, a "dry" variation is much more sought after and is made with much less syrup and nuts, almost exclusively pistachios. If memory serves right, they're made with 15 or so layers on the bottom, with a thick layer of nuts and then a relatively thinner layer of dough but here's the kicker, you don't put the butter in between every layer. The bottom layers do get buttered down but top ones dont. And once they're out of the oven, you pour down the COLD syrup on piping hot baklava. Add some more butter and cook it on a stove, boiling for a few minutes.

    traditionally, you need many many more bottom layers without any nuts, and on top, you need at least 10 top layers without any nuts. And you need to pour the syrup boiling hot.
    In my birthtown, it is usually done with more than 40 layers, all nuts on a single middle layer.
    you can do it like this too, but the experience and texture is really different. This is not an easy dish to do from scratch, thanks for popularising it.

    In the Ballkans, most baklava recipes use walnuts. I have two favorite kinds - the Greek baklava where the middle layer looks like cake, and the small round ash baklava, or baklava with a hole, made in Central North Bulgaria.

    I am Turkish and I live in the region where baklava is the most common, but I have never seen such baklava making anywhere. But I respect everyone's methods, by the way, we call the shape of the baklava you make as mussel baklava.

    If you’re looking for a film version (and a challenge for the homemade filo dough), The Old Guard has a pretty in-depth baklava analysis scene, which would be slightly different from the two made here.
    Also, The Old Guard is just good and more people should watch it.

      Hazelnut, flax seed, pomegranate, rose water, and from eastern turkey, though i dont know how location matters when making baklava, but different regions probably make it a little differently.

      @@ethanlee8307 it is about which peopole make it in the east there is more arabic like people called kurds they are the biggest ethnic group other than turks in the east turkey there is other ethnic groups like armenians , old greeks , etc its probably a mix of cultural foods but nobody really makes baklava like that when we think of baklava we think something like banish did maybe with diffrent nut and shapes
