- At 86 years old, Giorgos Hatziparaskos is one of the last bakers in Greece making phyllo pastry by hand. With the help of his wife and son, he keeps the business going thanks to tourists visiting the Greek island of Crete. Giorgos Hatziparaskos Handmade Phyllo Workshop is located in the heart of old town in Rethymno.

This type of food or when a man/woman puts their everything in what they do so they can support their family or because they love it..,should have an equal pay at least! Though in greece,(and I believe in many other countries) hard work never counts except if the job you are doing is for the government or if you own a very famous local or tourist shop,etc. Even then it may change your life only a little but... Fishermen, Bakers, small shop owners and many more, even if they put their hardest on their work..sadly they never go high and many times end up broke and in many depts... That's the sad reality..

I lived in Rethymno, Crete for 2 years. it was a lovely period in my life, meeting geniune people and seeing such amazing traditions, among them Mr Giorgos and his phyllo making
to all the people here saying they loved this video (me too) and praising the art and hard work of this amazing family, please raise you children, nieces, grandchildren or whatever kid is near you in this philosophy for their sake and the sake of humanity. Hard work is nothing to be ashamed of and forges a man's/woman's personality and strength in so many levels. So please, don't let people like him be the last ones on earth who proudly work hard to achieve their goals.

Industrialization has robbed many of their livelihood across the globe. The quality is something machines cannot bring in. It makes a huge difference between hand made and machine made.. Prayers that their business flourishes.. Thank you for sharing this video

This is in my town Rethymno. I always go to them to buy Phyllo, baklava, kadaifi etc. they are really nice people. When i told Giorgos about this video, he got happy and wanted me to stay more and chat. Lovely people

Joke aside, I am from Athens and I am often being asked by people I meet online "Oh do you know the temple of [name of a god] or the arch of [name of a god] or some random marble stone around Athens" .. honestly I only know where the Acropolis is and the temple of Poseidon (and i know that one because I live close by it :D )

All phillo(yufka) shops in Turkey use similar technics to make it, and yufka is very popular and used almost in every household always been in high demand.

These videos always make me cry, there's so much that goes into crafts like these, it becomes a labor of love. It's sad to see traditions like these disappear from cultures because of mass production.

I went by chance in this shop today. I watched this a few months ago, but forgot about it. That was a real treat to enter a random shop in Greece, and then realise that it is a place that you already "visited" online.

Absolutely. Food like that is a work of art and should be celebrated and the creators recognized for being the talented artists they are. It’s an important part of Greek history and culture, and I’m glad that people around the world recognize it.
I didn’t know that handmade phyllo is rarely available for purchase any longer. But then, my brother’s MIL still makes it by hand every now and then, and it’s such a labor intensive process with a lot of work for a small amount of dough, so I guess it makes sense that it’s not commercially viable to make it that way now.
Prob tastes a whole lot better and aromatic then those puffy pastry industrial dough

I had to make Phyllo dough in culinary school. Much respect for these craftsmen. It is an absolute unit of a task. I made it once and that was enough.
My Serbian grandmother made phyllo by hand on her dining room table. I remember watching her stretch the dough by hand when I was about 5 years old. It wasn't until years later that I found out what she was doing, how hard it was, and that none of her 10 sisters could do that. She was making pita zeljanica (Serbian Spinach Pie), we just called it pita. She passed away when I was 11 years old and was never able to pass down the secret.
I'm from Greece and i've been to their shop i can confirm that both the guy and his wife are really sweet people!

This is a great story of hard work as well as love for what they do. It is great to see the family still working together ❤.
This is a man who knows what he wants in life. The friends he made, and the places he travelled were all wonderful. All because he does what he loves for a living.

Came here as I'm a baker myself that makes everything mostly by hand and I know that it is such hard work. Watching an elderly couple doing this really makes me want to jump in and help them. They're truly a hero for keeping tradition alive and thank you Insider for making this touching video
Also keep up your passion as a baker too. You know never know you might do this tradition. I don't name but my sister those but i know there's passion
