Our church would have a wild game day once a year, the ladies would bring side dishes and the guys would provide the meat. I ate some really good meats!
My grandmother always cooked groundhog exactly like a beef roast in the oven. Honestly I loved it and it tasted better than told beef roast. She always told the little kids it was beef. Once they got a little older she would tell them the truth, they all would keep eating it and considered it a treat every time she would make it.
Only the good Lord in Heaven knows how many groundhogs in my short 61 year life in the Allegheny Mountains of Virginia .. we ate them because they are great .. only the young ones .. then pressure the older ones and then fry it up like an old Fox squirrel !! Not much different than wild rabbit. I know that my grandpa showed us glands under both front legs(armpits if you will) and those had to be removed. Just an FYI for anyone wanting to try it

Asked what it was I said "ground chuck" ( I clarified that before they actually ate it) I'd do it again. I think though I would smoke it afterwards as it was a snacking sausage.
All the groundhogs I ever ate were delicious. And why shouldn't they be? They were fattened up on the best produce they could find out of my, or my neighbor's garden! Look like big rats, but they don't eat like rats, or taste like them, for that matter. Just kidding! LOL

Armadillo in my opinion taste just like pork chop, the fat from the armadillo taste just like pork chop fat. i cooked it over a flame using oakwood and was good. Great video sir as always and y'all take..Will from Tampa, Fl

you beat that knife edge on a round rock and I think it would be sharper. Man, you need an oil stone. Victorinox semi flexible boning knife 5 1/2" or 6" is the best all around knife going. I like the Rosewood handle. The wood stinks for a few months but it goes away. They have the plastic handle too.
@@meandyououtside get a fine flat stone and a steel. Two or three light swipes cutting edge to into the stone on each side at the right angle on a stone and a couple passes on a fine steel and it's a razor. Doesn't take much to keep it sharp. They stay sharp till you get into a lot of bone.

Couple of tips that help tenderize meats....,#1 - adding cure salt (#1, 1tsp/5#) and canning salt to bring the cure to 1.5% of meat weight and waiting 24 hrs per inch of thickness will hold color and soften meat (a scale capable of gram readout is necessary). #2 - after that cut meat into 1/4 - 3/8" thick pieces, give a light to moderate covering of baking soda, mix it around, let it sit for 15 minutes, rinse meat, drain, pat dry, coat with favorite breading, and fry. The application of baking soda is common with Asian cooking. It's known as "velvetizing". It's why their stir-fry meat is so tender.

Groundhogs will destroy a soybean field. Very destructive.
Ground Hogs, raccoons, muskrat, squirrels and rabbits 🐇. Some were hunted and some were roadkill, from the time I was single didgets of age.

I eat marmots...just like woodchucks. Take all the glands and lymph nodes out and they taste just like beef.
