    I wanted to get you know, that if you roll out dough as you would for cinnamon rolls ,and spread the jam on it ,roll and cut exactly like the sweet rolls..it makes a delicious savory roll.

    My grandma made this years ago and she told me to add the salt early on, it makes it cook faster. It is the same when we make our onion side dish, the salt helps the onions release the water faster and makes them cook faster. Also: she made a version in the oven in a REALLY big batch, less stiring but it was more brown in the end, almost roasted.

      You can also use a slow cooker to caramelize onions.

      @@charitytanel8107 cut up onions, put them on low in your slow cooker. Cook them until they are as caramelized as you like. Mine takes about 12-14 hours. You can use a small amount of fat (oil, butter) if you like - about 1/4 cup.

    Your little word Jumble reminded me of a funny story....Many years ago, My sister has her first baby. Her husband of 8 year's was so excited, they had waited so long ,that he decided to have the House nice and clean for my sister ! So he loaded up the Washer , mopped the floor's etc and ran back to the Hospital to pick up his waiting wife and new baby ! When my Sister and I (I was 16 at the time) got out of the Car,He said, boy do I have a surprise for you , I cleaned the whole house ! My sister had a look of horror on her face that surprised me...so I asked her what was wrong, she whispered, He doesn't know how to clean a House ...When we walked in, he had loaded the Dishes in the Clothes washer ! My Sister spent the remaining part of the day cleaning the House again,and he spent the rest of the day watching the Baby ! I helped her clean,Lol

    I just made my first onion soup and I wouldn't have if I hadn't seen a Martha Stewart recipe for caramelizing onions in the instant pot. OMG what a game changer. 5 min!! If you decide to try it (recipe is on her website) cook the onions in the IP and then drain the liquid into a bowl. She says to discard but I tasted it and wowsers! gorgeous broth which I added to the beef broth in the soup. She then says to put the drained onions back in the IP on Saute. Nope. don't do that. Put them in your Dutch oven, stir it for about 5 minutes and they'll begin darkening. Let some fond build up and scrape once or twice. When it really starts to build, deglaze with wine and go from there. I don't see why you couldn't do the same with this jam. You might give it a try. It was the best onion soup I ever tasted and that's good because life is not long enough for me to ever stand there and stir anything for an hour. Good luck. Love your channel.

    I fell in love with onion jam last year after watching Heather make it. Whoever thought to put onions, butter, brown sugar and balsamic together knew what they were doing! Love it on grilled Gruyere cheese sandwich! Not so sure about the strong flavor of cinnamon and cardamom but if you like it that's all that matters.

    Just saw your canning of OJ & looked at your canning list to see this yummy treat. I just wanted to say that when you go to food banks you can end up with things that's just way too much because it was plentiful that day. Or you could have nothing to fix it with that week.
    I've kind of been wanting to get into some canning simply so I can preserve things I either get at a food bank or get on clearance. Or even just buy.
    Although since I've been getting the full amount of SNAP I haven't had any reason to go. Once those are gone I & a friend will probably start going occasionally again. Helps to make ends meet easier even though for one person it's often too much. So I started putting food out on my apartments laundry room table for others to have & now lots of people are donating stuff to neighbors. Less waste all around this way. Especially the rice,beans,lentils, etc.

    New Zealanders call this onion marmalade and its eaten with meat dishes, included in quiches and spread on rolls and bread. Love it!

    Americas Test Kitchen says to put baking soda on onions to caramelize faster. I've done it & it works like magic! I would say only a tsp. for that amount of onion. I love my instant pot for a quick job of cooking down veggies. I watched your green tomato ketchup. Thank You.😊

    Oh, my, this is delicious. I made some on Wednesday and canned it. I went back to the farm stand yesterday to get more onions, and have another batch going right now. I needed to make it without sugar, and found sweetner worked well. Thanks for the great recipe.

      May I ask what kind of sweetener you used? I'm a type 1 diabetic and I'd love to make this for myself, so probably a much smaller batch! Lol

    When I make this, I have it in 2-3 pots depending on the quantity to cut on the caramelizing time. There is an approved recipe in the latest ball book (not the bluebook, but the thicker one). I use a two prong service meat fork (no clue what is really called!) to pull out the canning layer platter/divider (the thingamajiggy).

    Just bought 50 pounds of Vidalia onions and will definitely make some of this. Also some of your caramelized onions. Most will dehydrate, some freeze, some to friends and family. God Bless and stay safe.

    Love my Vidalia Chopper. I would cut the onions in half across the width to make it easier on me and on the chopper. It's also great for other veggies--peppers, potatoes, carrots, and so on. Saves so much time and effort.

    I use a chop stick to get my racks out of the canner. Easiest way I’ve found!

    You should consider looking up how to caramelize onions in the oven. It takes a while but at least you can get on with other things at the same time.

      I was considering caramelising them as I do to dehydrate them. In the slow cooker for 6-8 hours

    A frozen stick of butter will completely melt in about 35 - 40 seconds on high in the microwave. The stick will fit into a larger size glass custard cup. Cut the stick into 4ths so the butter stays in the cup instead of melting onto the microwave base.

    this is so great. I have an overwhelming abundance of onions (even after canning up french onion soup and pickled onions). I've made this before, years ago, but had forgotten about it. Your recipe sounds so lovely so I'm going to try it tomorrow. I'll probably binge watch your videos while I make it.

    OMGosh! My mouth is watering! I am definitely putting this on the must-do list!
    To take the canning rack out of the bath, I use a granny fork. At least that’s what my Mama called it. It’s basically a very strong, long wooden handled 3 prong fork. I just poke on of the prongs in the rack’s holes and ta-dah!

    I put my heavy stainless steel resturant pan over two burners on my stove and it goes so much faster! I had to find a shortcut and it worked! Just make sure it is a really heavyweight rectangular restaurant pan and you’ll be all set. I love your recipe! Thank you. 😍

    Making onion jam today (and tomorrow), too. Got mine from Linda's Pantry, too, a couple years ago. The onion chopper is indispensable. I put my onions in the crockpot overnight, with the butter and salt. We found a chocolate balsamic, which makes a *delectable* jam. An find it at The Olive Mill, there's a store in Saugatuck or they do mail order, too. The other onion jam I make is with the maple syrup. Yum.

    We're having to rent a house right now, long story, but if we're renting it still next year, I'm planting onions, carrots and tomatoes. One of the things I miss is having fresh produce to can and cook with. Your recipe has reminded me of that. Thank you for sharing this great recipe.

    Good morning Rachel :) LOVED the pantsuit you are wearing - you look lovely. I think i will try that recipe but with shallots as i have an oversupply of those. I was thinking i could maybe add some sherry to the recipe.....any alcohol would be completely gone by the time it has been cooked and then recooked in the water bath. Hope you have a great week ahead of you :)

    I made that last fall. I thought mine was from the kneady homesteader but the one i made had no cardamon in it or maple syrup i believe. But anyways i love it. So good and so worth the hour it takes to reduce and caramelize. So worth it...!

      Your welcome, I saw others that use pectin so you really get the jam thickness. That might be a good option for you to research too

      I made this last year and I’m not sure what I did wrong but it was hard as a rock in the jars… all of them. But, I am going to attempt this again (on a smaller scale this time) as it looks and sounds so delicious!

    We have 'put up' about 40 lbs of onions by dehydrating, fermenting and freezing along with storing around 30lbs fresh. I have more coming in and I think this would be very nice to try. Huge fan of maple and balsamic, not sure of the cardamom and cinnamon. Might try it without those.

      I'd definitely try the cardamom but leave out the cinnamon if you're unsure.

    Next time you make this try caramelizing the onions in the crockpot, it takes more time like 10-12 hours but it's so much less work and almost entirely passive.

      @@rebeccacron8614 you do need to give the onions a stir a few times during the cooking process so they caramalize evenly though if you put a lot in.

    I think you can caramelize those onions in the oven or in a slow cooker - though it takes longer in the slow cooker - but then you could justify making more of it because it looks really delicious!

    I've made Red Onion Jam. It was terrific. I don't remember using butter. But I did use the balsomic, rosemary sprig, then removed, sugar, lemon juice, and a bit of garlic, if I remember. It was several years ago by request, so I found a recipe on line.

    We always pull our onions before the first rain because after that, they will rot. It gets too hot here in sw tn! Yours are so pretty! I started by bulb last year and they didn't do much of anything, so ill be either doing starts or sets over this winter if I can find them!

    Love the video, thankyou. Tip: when lifting the double deck plate from canner use a wooden spoon handle. Hold the bowl of the spoon, this stops the plate from sliding down onto your hand.
