Slimming World lasagne recipe - 1 Syn

    Serves 4
    Syns per serving - 1 syn
    low-calorie cooking spray
    500g lean beef mince (5% fat or less)
    1 red pepper, deseeded and cut into small chunks
    1 courgette, cut into small chunks
    1 onion, finely chopped
    4 garlic cloves, crushed
    400g can chopped tomatoes
    400g passata
    2 tsp dried mixed herbs
    500g fat-free natural yogurt
    2 eggs, lightly beaten
    a pinch of nutmeg
    12-15 dried lasagne sheets (depending on the size and shape of your dish)
    4 level tbsp freshly grated Parmesan
    Spray a large non-stick frying pan with low-calorie cooking spray and place over a high heat. Add the beef and stir-fry for 3-4 minutes, breaking up any lumps with a spoon. Drain off any fat in the pan, then add the red pepper, courgette, onion and garlic and stir-fry for 6-8 minutes. Add the tomatoes, passata and dried herbs, season lightly and reduce the heat to medium. Cook for 12-15 minutes, stirring often. Meanwhile, mix the yogurt, eggs and nutmeg until smooth. Season lightly and set aside. Preheat your oven to 200°C/fan 180°C/gas 6. Spoon one-third of the beef mixture into an ovenproof dish and spread it out to cover the base evenly. Top with 4-5 lasagne sheets, snapping them to fit any awkward spaces. Repeat the layers twice more then top with the yogurt mixture. Sprinkle the Parmesan evenly on top and bake for 30 minutes or until the top is golden and the pasta is soft.

    I’m so glad I found this channel. Years ago my wife and I lived in Cardiff, we each lost 40lbs attending slimming world. Since we moved back to the states we put it back on. We tried our local weight watchers but it just doesn’t have that personal touch we had at slimming world in Cardiff.

    That topping sauce is wonderful. It take milliseconds to make, can be used for any dish requiring a white sauce ‘lid’, and looks great - puffy and golden brown. Oh, and tastes good too! In fact, we actually prefer it to the traditional sauce now. 😊

    Thanks Sal. I have followed that to most of what you said but used a few more veg. My Wife DID have type 2 diabetes but using Slimming World & Hairy Bikers Diabetic recipes all we have to do is monitor her sugar levels (no Insulin injections or pills). It can be done if effort is put in! Thanks again & I have subscribed. All the best.....

    Made this today. It was great. Only problem put in oven at 180 fan for 40 mins and top was burnt black but managed to lift off top layer of lasagne sheets. Delicious with broccoli.

    Can you taste the yogurt .I made salad dressing with the yogurt and i could taste it . Will make this , looks lovely

    Doesn't the sauce have a sour taste due to the yoghurt? I find small knives are not easy to use. I use a large knife which cuts and chops anything you want. Thanks for the tip about putting lasagne sheets in water.

      Hi there, no we didn't find it has a sour taste - especially with the parmesan which is a strong flavour - but it is entirely down to personal preference. if you don't particularly like yogurt you might pick up on that more. Thanks Guv, Slimming World TH-cam team x

    Sadly I’m giving up on the sauce. No idea what I’m doing wrong (simplicity itself on the face of it) but just not turning out right. Separating even before going near the heat and a slightly bitter yogurt taste. Will need to look for alternative.
    Despite my personal failings your vids are wonderful. Thank you for posting.

      Oh no! because of the low fat content, products can be vulnerable to splitting if they're added when sauces are too hot (or still cooking) It shouldn't affect the flavour, but the appearance is not too attractive as it ends up looking grainy or bitty.
      If you take the sauce off the heat and let it cool a little it will help. Also take the product out of the fridge about 30 mins before it's needed so it's not so cold and it should help stop it happening again.

      Hi it's a standard rectangular lasagne dish with corners for the sheets. I think this one is 30cm long x 20 wide x 7cm deep. Hope that helps, Amanda, Slimming World video team xxx

    Made this tonight and unfortunately for me the "white sauce" came out more like cooked egg on the top and I flowed all the instructions , but I don't waste food , so will still be eating it 😂😂 , any help will be appreciated 👍🏻

      Due to it's low fat content, sometimes fat-free yogurt/quark/fromage frais can separate when cooked and it’s not always obvious why.
      Here are a few possibilities why it might have split:
      • Yogurt is too cold. Let your yogurt warm up a little bit at room temperature before it gets heated. The sudden temperature change of going into the hot oven can make splitting more likely
      • Not enough mixing - try mixing the yogurt and egg a bit longer, so they’re more combined
