Baking soda (Sodium Bicarbonate) is mildly alkaline while dates are astringent and there's tannin in them. (An astringent is a chemical which shrinks or constricts the dates) The baking soda neutralizes the astringency and lessens the tannin bitterness. When tannins are extracted into hot water, some of these compounds are partially hydrolyzed to form free gallic acid. If Sodium Carbonate, a base, is added to hot water, these acids are converted to their sodium salts, which are highly soluble in water. As the tannins within the date keep converting into salt, the colour of the date eventually changes. P.S. Don't think I'm a nerd guys....😫 Reynold wanted to know the reason for the colour change and I also kinda got intrigued so I searched it up *a little bit* and tried to explain it... :") Don't get mad at me guys...

Ok I tried this recipe and the verdict is: OMG! It’s sooo easy to make n damn delicious! The only thing was I couldn’t figure out the oven temperature (yes I kept repeating the videos but Reynold didn’t mention). So I set my oven at 175C (fan forced) and baked it for like 65minutes. I also found the Muscovado sugar is best choice since it’s not overly sweet! Love eating it with dollop cream instead of ice cream (personal preference).
Oh my gosh, you were and still are my favorite chef on masterchef, I sincerely thought you were gonna win. Love you, you really inspire me as a junior cook

Had my doubts when I first watched the video but decided to go for it anyway and I should've trusted my guts. I feel like Reynolds sticky dates pudding is a little dryer than other recipes that I've tried. Which is a bummer cause I normally enjoys Reynolds recipes....
All plants will release tannic acid aka tannins after being heated. This is what gives astringency to tea and also why when flavoring wort with unmalted grains, you want to keep the mash temp below 160ºF, as it will limit the amount of tannins introduced to your wort (as well as contribute to a more efficient starch conversion). With dates, adding baking soda will neutralize the acidic component of the tannic acid, giving you less astringency in the product. Baking soda will also help draw out tannic acid still in the dates.
I made a salted caramel chocolate tart for my mom's birthday. Reynold's videos have inspired me to try out more difficult recipes. I've been practicing, and I learned so much. I'm happy to say, the tart came out incredible! I can't wait to try out Reynold's snickers tart.
I don't know if you know this. There are some other types of dates (sukhri) which available in Saudi Arabia. It is not thick and hard, very soft too, much easier to blend or make it paste. Should try it.
