In the oven at 160C for 15 minutes. The sugars and milk solids in the milk chocolate caramelises as the cocoa butter splits. Creates a deep nutty and reduces the sweetness. Its amazing.

He knows every ingredient by the gram and it's on his cookbook, he made this before and tweaked the ratio at least a few times probably. Also it's chocolate hazelnut peanut butter coffee, don't need to taste it to know they go well together lol.

In the clips I’ve seen on Masterchef of him, he seemed so shy & innocent. I find this vid of the him & he is so humble, playful & so damn real! How many chefs making vids actually show the mistakes, the struggles and corrections as well as their tricks in their vids? He takes to dessert almost as an artist does with their bonsai. He presents the dessert in the way of a true artist at heart in so many different dimensions from taste, texture, color, contrast, emotion and structure. So much passion in your artistic skill is a rare quality to have and I suspect this mindset comes from a line of different types of artists all the way back in his family lineage for generations. What a legend. The creativity and being one with the food is unreal.
I 100% know I'll never make one of Reynold's recipes, but I also know that I'd 100% scarf one down in milliseconds if I was ever given the chance to eat one. Also watching how his brain works as he cooks is absolutely fascinating.
