His iris might not even be red, his eyes are likely black for the most but the iris remains of a natural eye color and not red. I still haven't seen anyone mentioning this. The Anime might be wrong about his eyes as well.
The reason people don't mention that is because there is no connection nor correlation at all. Ishida has somewhat already teased Kaneki having a permanent red eye after coming out of dragon. If this actually happens, it backs Uta also coming out of dragon and using tattoos to cover his permanent red eye up. Also considering they loosely explained that RC Cells are extremely highly concentrated in the eyes, one could assume that *Red* being the natural cell color is dominate in the eyes.
