Pakora Manipuri vegetarian dish

- Makes:- 15 Pakoras
Ingredients:-
For the batter
1. 250 g gram flour/Besan
2. Water to form thick batter
3. 1 teaspoon chilli powder
4. 1/2 teaspoon tumeric/machu
5. 1 teaspoon crushed jeera
6. 1 teaspoon sodium bicarbonate/sodabigaup
7. 1 teaspoon ghee/clarified butter (optional)
8. finely chopped chinese chives/ Naakuppi about a tablespoon
9. Salt to taste
For the stock

Thank you for this recipe! I remember reading an anecdotal story about pakora thongba in a book by Hoihnu Hauzel...back in the colonial era, there was a king named Surchand Maharaj who invited the British over to his palace for a meal, and one of his guests was so in love with the pakora thongba that he wanted to know on which tree did the pakoras grow, not knowing that they are neither fruits nor vegetables!

Thanks Sanachan. Well, when you sprinkle some water the pakora will raise/expand as the water enters the pakora it will form small pores and this will also help pakora to be soft and spongy. Hope this help.

I have a question ... ultimately wat is the purpose of that chana and tomato which she has boiled?
Channa dal is boiled and mashed and forms the base for the curry. Tomato will give some tanginess to the taste. It adds so much to the taste. Try it to believe it. 😜

Can I use rice powder instead of besan ?
Hi Vijay you can try mixing with besan and rice to give extra crispiness but using only rice flour won't give you the local taste, yes of course you can try though. Thank you for the feed back.

Sumitra, I would recommend spring onion if you you are unable to get Chinese chives/naakuppi.
