USOI MANGAN UTI - TRADITIONAL MANIPURI VEGETARIAN CUISINE /MANIPURI VEGAN DISH

- Ingredients:
2 cups of overnight soaked dry peas /mangan atingba
1 cup of sliced bamboo shoots /usoi
2-3 tbs of short grain rice /cheng
1 tsp of freshly crushed ginger sing asuba
2 - 3 tbs of mustard oil / achathao
1 bay leaf / tej bat mana
3-4 pinches of asafoetida /hing
1 and 1/2 serving spoons of chopped chives /yenam maroi nakuppi
1/2 medium size onion, chopped /tilhou
1 tsp of chilli flakes /morok asuba
Few pieces of wild orange skin / heiribob
3/4 tsp of salt / thum
3/4 tsp of sodium bicarbonate /soda baicap
chopped coriander leaves / phadigom

Everything is ok, Why Baking Soda, it is not good for health.
Well that's the main ingredient of utti. And the fact is, utti is very effective in balancing the excess acid in our GI tract. As cooking soda is base in nature it neutralises the excess acid.
Shouldn't have utti everyday though. So every manipuri knows that utti should be had once a week to keep a healthy digestive system 😊
