I've been doing this for years, like my grandma did. The first time I did it, after getting married, my husband freaked out .... lol. Anywho, I've only done quick breads and dessert type things. I used to make single serving ones in the 4 oz regular mouth (smooth walled) & the 8 oz Kerr wide mouth ( these are GREAT for single serving pineapple upside down cake). Side note....we're eating canned Boston brown bread, banana bread & pineapple upside down cake that was canned in '20! I'm not recommending that just saying that ours is still useable without 'adverse side effects'. Thank you for sharing! SO many people won't can these or even eat these bc the process isn't F......D......A approved.

Some of them did get covid and end up in the hospital but they take care of each other and fared much better than others. Peter Santello has a video about it.
Bak in the early 80’s when I was in college my mother make zuc bread and banana bred for me to take back to school as well as other meals in a jar. Convent home cooked meals while away from home.
I discovered you on TH-cam not long ago and thank God I did! Of all the home canners,including " rebel" canners you are the best! I never seen this done before.Now i can make room in my precious freezer space by using up those over ripe frozen bananas and zucchini ! You,young lady,are a blessing!
Just incase you havnt done it this way, when I make this I use a canning funnel and a ice cream scoop and I believe it is 3 scoops for a pint jar and it makes them all even and easier (at least for me) to keep clean, cause I am a messy cook lol. Love this fantastic.
Another great thing about this is that a small jar would be perfect for an afternoon treat with tea or coffee. If a whole loaf is left on my counter I’ll eat the whole thing and that’s not good. I love not having to depend on freezing either in case of a power outage. Love this idea!!!
Love the videos. I've done this with Boston Brown Bread, in the past (before the Diabetes Fairy made a surprise visit...LOL). A little trick, turn the oven off, and with the door open, take the jars out one at a time and put on the rings and lids. There will be no problem with them cooling down too quick and the door being open will let most of the heat escape, keeping them from over cooking. I guess I am going to have to make a batch of BBB, just be stingy on how much I have at once (though it is sooooooo good, it is difficult not to eat it all .... hahahahahaha).

This would be great for baking fruit cake.. Years ago my mother bought date nut bread in a can from a grocery store. I was so amazed and mesmerized as a child when she opened the can and bread came out. And it was so good!
Maybe not "approved" now but I have a Kerr canning book from 1941 with a recipe for canning bananna bread...it did say to grease only the bottom of the jars, made it very often when my kids were little and was easy to take some to Granny's house...never a problem but when they/ or me grew out of it a jar was pushed to the back of the pantry, found at 7yrs old and was dry as dirt

I am going to try this with brown bread. I used to make it regularly in coffee cans in water bath but the end is open with aluminum foil-Delicious, but you have to eat it right away.

Wow! I love your videos and your channel! I tried this recipe yesterday and I opened a jar this morning to see how it was… And WOW.. absolutely delicious! So moist ! I added some raisins and cranberries to half the batch… When I opened the jar .. there was some condensation inside on top the lid… is that normal… I didn’t over fill the jars.. only about half.. maybe a bit less.. so there is still a fair amount of headspace.. but they all sealed… Thank you again for this delicious recipe 🙏🙏♥️♥️ I want to make pumpkin bread now.. do you have a recipe.. or can I make with any recipe that I have on hand.. Thanks for the info. The knife you used to get the bread out is called a dinner knife, not a butter knife. Butter knives are smaller. The preferred ones (hard to find) have a horizontal handle and a vertical blade. You NEVER use a dinner knife to transfer butter from a butter plate to your dinner plate. Using a dinner knife for that purpose can transfer germs from your dinner plate (i.e., from your mouth) to the plates / mouths of others, and vice versa. Butter, in whatever serving size you prefer, should be transferred, via a butter knife, to a bread plate or onto a vacant spot on your dinner plate. The goal is to avoid letting the butter knife touch anywhere it will come in contact with your mouth microbiome . . . like from your eating utensils or from food partially eaten. Once the butter has been transferred as described, you would then use your dinner knife to apply it to your bread or vegetable. In summary, use of the butter knife provides a barrier which prevents meal participants from sharing their oral microbiome. The same is true for other self-served table foods. . . gravy spoons, jelly spoons, dessert topping spoons, etc. Always avoid providing a link from your mouth to the mouths of others sitting at your table.

I have been pressure canning for years. I like this idea question for does the oven sterilize the jars as it bakes the bread
Yes your baking at 350, a pressure canner only heats to 240 so the oven will get the glass hotter than the pressure canner. So it will sterilize it
